If anything I recommend reading the first three and stop, that is where some story lines “kind of” close and the second half of the series begins so you can maybe get a partial ending and still enjoy amazing books
Even unfinished, ASOIAF is the greatest fiction currently. The first 3 books alone beats EVERYTHING in terms of its writing style. What I mean I, I have other books series I like more, but the way ASOIAF books are written is what makes them the best. And i wish my favorite books were written at the level GRRM wrote. The writing quality is the standard, and everyone who has hated it before reading it comes out saying, "It is the best written fiction, even though it's not my favorite series"
I do have a lot of interest in reading them, but knowing the series leads to a dead end is what keeps me from reading it. Plus, I just started The Cosmere, so that is going to take up all of my reading time for a good while.

The silver lining is GRRM heavily foreshadows things to come, so if you really dig into the books, you will start to figure out some of the bigger mysteries and figure out where things are headed. Oh, and if anyone tells you GRRM is a gardener-style writer and even he doesn't know where the story is headed. It's because he made a statement saying when writing, he just plants seeds and let's them grow, some he tends to and others he doesn't, but that is actually an inside joke for those who have figured out some of the books secrets.
