There's a buffet in NYC that states "Stone Crab". At first, looks like stone crab. But got suspicious when they also included the body and rest of the legs. I ate stone crab in Marathon Florida. The flavor and texture are not the same.
I use to work at a Jonah crab processing facility here in Nova Scotia, Canada. We would cook and score the claws on a saw to make them snap easily for consumers. All the meat was processed. About 2 months into it I became sensitized to the protein that distributed in the air from the saws and steam from the cook. I suffered a great deal with 'crab asthma' for 3 or 4 years everyday I gasped for air while at work. Now after this job the damage it done is irreversible and now I got COPD. At times some of our live crab came from America, for some reason we found the American crab more favorable at giving us a worse reaction
