- Had a fun visit at the @thebettermeatco in West Sacramento. I got to see their production process and try their ground breaking mycelium based “meats”.

They use a specially selected strain of Red Bread Mold (Neurospora crassa) to make food grade edible mycelium in an extremely sustainable and scalable process. This is the food of the future, high protein, good dietary fiber, low allergens, no fat, easy to transport, quick to grow, and incredibly adaptable as an ingredient.

I was particularly impressed/mind blown by the fungal foie gras, it’s a delicious cruelty and animal free version with none of the guilt or ethical issues. Such a cool visit, thanks to @paulshapiro1 and @heymorc for hosting!

Yea this stuff was surprisingly good! Mycoprotein is different from all of soy based meats, better fiber and protein
I like this approach to alternative meats made out of soy and chemicals.
It’s got more fiber and a better ratio of amino acids too!
Its not necessarily soy and chemicals, mycelium can grow on any substrate like beans, wheat, or rice ect. I've tried to make my own using lentils and rhizopus oligosporus mycelium. The problem is no matter how i tried to ferment and grow it, it would always turn out tasting like shit, i would need to boil it afterward to make the taste edible. If i had a better starter like white button mushrooms maybe it would taste better.

I've always said no way to any plant based or any kind of alternative to meat, but I must say, you've made me much more hopeful!! If I had to base it on this alone, I'm already sold!! The Better Meat Company is going to owe you big time, I think??!!😂🤔👍🙏😌

Quorn products are all mycoprotein based and are super affordable and versatile, definitely recommend them

If it’s mycelium than wouldn’t the majority of it is either brown rice or a grain of sorts? Why not use the fruiting bodies? No knock on the innovation just want to know, cheers 🤙
No, this is pure mycelium cultured in a liquid medium without any grain or filler in a giant airlift bioreactor. The fibers get processed by a giant texturizer then dried. The dried product is then turned into the variety of stuff you see here.

Impossible/Beyond are the wrong direction.
Those are both pretty different products, but they are both plant based. MycoProtein is more nutritional, has good dietary fiber, and often better flavor in my experience.

Right now they are selling B2B, so I’m sure there are products out there featuring their stuff, but I’m not sure what 🤷♂️
