I went to 999 Shan Noodles from 1995-2003, it was the best around. Very friendly and less known by tourist foreigners. By 2002-3 it had a strong reputation. But still very friendly. I nearly worked for the mother being interviewed, she wanted me to help her monk speak English. She asked me the day before I was booked to leave Myanmar.
At 6:00, I noticed that the bald headed guy (Westerner) at the table behind Khin was speaking Burmese when he ordered his food. I wonder if he is one of the many expatriates like yourself, working in Myanmar.
Khin is always cute, I know this 999 Shan noodles restaurant, I had tried it seventeen years ago, the price is reasonable and clean, not like the other street food in Yangon.

As you kept talking to him you got him to loosen up and then I understood his demeanor. What an excellent idea to preserve the actual history from the 70"s, 80"s and 90"s. It is said that the government is so restrictive. Loved this video.
These backlanes were infected with septic waste (shit)from broken sewer cast iron pipes running down back walls into cess-pits. I would not enter them for fear of catching dermatitis or skin infections. The Rangoon Municipal Corporation were responsible for its periodic clean-up done by Coolies paid by the Corporation. Residents threw out their Garbage into these backlanes as there was NO household waste collection for several years. If you contact the walls with your skin you could end up with sores or Psoriasis which is difficult to cure. I lived in Rangoon 1945~1967 my youthful years. I kid you not.
Psoriasis is a common skin condition that speeds up the life cycle of skin cells. It causes cells to build up rapidly on the surface of the skin. The extra skin cells form scales and red patches that are itchy and sometimes painful. Psoriasis is a chronic disease that often comes and goes. You will need to consult a Dermatologist (Specialist in Skin Diseases) as ordinary Doctors can't beat the disease easily. Take kindly the wisdom of the years I am 77 years of age now. He went on as if he owned the back lane. HE DOES NOT. The Rangoon Corporation owns the back lane. (Crown Land in British days) There are Pipes laid beneath the concrete in the back lane. Rangoon Compressor Station forced pressurised Air for the Waste Sewerage to be disposed of in the Rangoon River. There used to be 25ft tall Vent Pipes along Dalhousie St and Fraser St as well as Merchant St some of them are still there but shortened. Periodically in my youth I heard them a Whoosh sound. Compressor Station is still there at Creek St and Dalhousie St cnr. but Inactive. Severe blockages were caused by Jack Burmans using bamboo sticks to wipe their backsides instead of water or toilet paper. The System could not cope with bamboo sticks.
To be fair we were a bit pushy to get in and see the walls. It probably annoyed him. In any case I think he explained his project well which is why I included the whole chat with him pretty much un-edited.
I'm guessing because of the country's past, some people are a still a bit overly cautious. Thankfully, Myanmar has open up to the world and there are people with the forsight to preserve its culture.
