- This Thai beef noodle soup recipe is legit. Inspired by the traditional Thai shophouse style, this is ‘last meal’ kind of food for me. The umami, savoury, aromatic beef broth is such a winner, and the braised beef is meltingly tender. Pile it together with noodles and you have an all-time unforgettable soup. And the beef bits you see in the list? They’re optional. If some parts like the liver or tendon are not your thing, that’s totally OK. I promise you it will still be delicious.

I was a former cook for a noodle shop in Bangkok and one of the most important tips I know from the owner is to let the beef stews, in the same broth you serve for at least eight to ten hours.
That will turn your beef into a sensational melting meat in your mouth, but no more than that or it will ruin the beef. His broth main ingredients are bones, onions, and herbs (like those that were used in this video I think?). He used the Round part of beef, and just plonk it in his large pot.
The noodle shop I used to work for closed down because the owner was very ill then, and there was no one to look after his shop or can continue his work like him. (He had tumors in his brain and spine)
His shop was at a gas station in Sathu Pradit district, he's very kind and give discount to students.
in fact, it's a chinese style 's beef noodles adopted in Thailand which you cannot find it in china. Even chinese tourist has to come and eat it in Thailand.

I spent 1 year in Thailand in elementary school. Every morning I had some kind of noodle soup in the canteen. The broth was magnificent. It wasnt't quite dark and it tasted like coriander. I have been trying to recreate this flavor, find this soup to no avail, put excessive amoutns of cilantro in my broth but it doesn't even come close. I hoped this might be it, but I don't think so :( Although I must say this noodle soup looks mouthwatering.
The soup in this video is beef soup, it usually consist of cinnamon, chinese spices and use more dark/light soy sauce. While the one you mention likely to be “clear pork noodle soup” (im not sure) which have many recipes. And the coriander taste come from coriander roots (crush) plus garlic and white pepper bc these three always use together in different ratio depending on your taste

I just cannot wait to visit Thailand again soon. I wish we have this kind of food in Sweden. But for now I'm going to learn this from your video at home.
Basically, Thai noodle has 4 size of noodle. Large (sen-Yai), Small (sen-Lek), and white Thin-rounded small (sen-Mee-Kao) and Yellow Egg Noodle (Ba-Mee or Sen Mee Luang), to what you've eaten was Sen Mee Kao,i guess. all 4 kinds of noodle gives you different texture, touching and flavor absorbing of the size of noodle. Try it all next time.

Although your soup looks tremendous, I think making it is more labor-intensive than a lot of really fancy dishes. That is a deal-breaker for me.... As a soup just gets thrown together where I come from!🎉❤
Beef noodle soup is my favourite noodle soup in Thailand. I had for lunch every day during my high school years.Why I like it because there were stew chunks beef,beef ball and blanched beef.

I would use rock sugar instead of palm sugar. Also, skip the ginger thing since its smell might ruin the five spices flavor. I think most beef noodle shop in Thailand would use only star anise as a spice, no cinnamon stick and others. (I may be wrong but it's from my observation and experience)
Your observation or lack thereof is wrong, brother. Soup base uses cinnamon, it is widely used in fact. Stop giving advices if you dont know how to make one. 😂

Can you make a Thai BEEF noodle soup, with chicken? Wow.
Well, technically you can but I wouldn't recommend it, since chicken meat usually gets tough when you boil it too long, and this soup needs time to cook and develop flavours.
On the other hand, it would be called chicken noodle soup instead lol
