Hi. Did you use coarse semolina?

Use fine semolina, if u have coarse just grind it to make it fine,
Using the right variety of semolina will help u to make a perfect kataif dough,
The proper way of kataif is to seal the edges, it's up to u if u want to bake or deep fry, it suppose to be crunchy on both sides,
