I would like to see how it works with a regular "sit inside" kayak that does not have bottom tracks on the boat.

It would still work really well. The majority of kayaks have a hull design that is curved to sit submerged in the water and to help with easy of movement in the water. You could adjust this cart so it supports the curved design and then strap it down and you should be good to go!
