    I spent months perfecting this sort of caramel. I couldn't add the butter at the start without it producing a burnt flavor, so I added it at the end instead. Also, I didn't know if milk had too much moisture, so I only used cream to thin it.
    Also, if you can melt the sugar without cooking it, you can caramelize it more in a more controllable fashion. You do this by stiring it quickly to begin with, and slowing down once it starts to form clumps. The reason I spent months perfecting it, is caramel is a great recipe to practice controlling the heat in the pan (don't be scared to move it around, up and down, on and off). The less motion while caramelizing the better. But if it starts to bubble at any spot, stir it quickly and disperse the heat, or you get a burnt flavor.

      Just pure cream.
      Creams like thickened have too much thickener and dont taste as nice.

      In this video this guy doesn't make Butterscotch, this is actually caramel. If you want to make Butterscotch you need to replace granulated sugar with brown sugar, use more heavy cream and more butter.

    Chef, what you made is caramel. Butterscotch is authentically made with brown sugar, cream, butter, vanilla essence and a pinch of salt. A bit of scotch whiskey was added by some to it, which is why the name butterscotch came up.

    CookingShooking Good effort! However one tiny flaw in the technique. Never stir the dry sugar. Let it melt over low flame. At most you can tilt the pan to swirl the caramel. Stirring will crystallize the sugar in the pan sides and on the spoon.

      And you can paint a little water with a brush on the inside of the pan so that there will be no Crystallization there as well

      Arnab mitra sugar crystallized only in this condition when u add water in the sugar and stir it when u melt only sugar in a pan using no water in it sugar will never crystallize and he use only sugar thats y he stirring

    Just a tip. Simmer the milk and cream first its way easier to blend it in when its close or as the same temperature as the Carmel.

    I tried twice to make it, using the lowest flame I could possibly use to melt the sugar, and both times it started getting lumpy, and then after it melted and I took it off the flame, it turned into rock hard candies as soon as I added the butter!

      you shouldn't let it cool at all before adding butter, and make sure to mix it as you're adding it. It's supposed to be a very quick process because the melted sugar will go very hard if it cools down at all.

      You can add the butter before melting the sugar. Actually, there are recipes that call for mixing in all together before melting/caramelizing the sugar... it takes time to learn, just be patient. It took me years to get the best recipes just perfect, my husband is a chef and he still gets his own recipes messed up... it's trial and error... good luck

      Hi. I used Amul Cream of 200 ml or you can use any fresh cream available in the market. Whipped cream isn't needed out here. Mix it with 100 ml cold/normal room temperature milk.

    To avoid lumps make sure ur milk and cream is not too cold best to have it room temperature , made this today 😋😋
