Ingredients:
1 cup (16TBsp) 225g butter
2TBsp (45g) honey
2/3 cup (100g) brown sugar
zest of lemon
zest of orange
vanilla
spices
1tsp baking powder
1 2/3 cup (230g) flour
3 eggs
3/4 cup (100g) any nuts
3 cups (560g) dry fruits

I tried this last night. I have to say that, glad I found your recipe when I suddenly thought of baking rich fruit cake without having to spend time in the traditional way of soaking fruits etc. This recipe has no dramas n delivered same results. I ran out of honey and replaced it with fruit jam. The sugar level is just nice. This recipe is the only fruit cake recipe which I will stick to. Thank you from 🇲🇾

Such an easy and delicious recipe. Thank you and thanks for responding to a post where you said it was okay to substitute water with rum. The mix cooled a bit more so that the batter was a bit too thick. I thinned it with rum and then poured a little rum on the baked cake. Oh la la… the aroma when baking was heavenly. The cake tasted even better in a couple of days. Thanks again.
