    I have been making them like fat bombs, 8 eggs, block of soft cream cheese, 1/2 Ib of cooked breakfast sausage, some Redmond’s salt, stick of butter, I am going to cut the butter in half, crumbled bacon. I use the same muffin pan without coating, top them with sharp cheddar. 325 for 30 minutes. My great grandson’s love them. They are wonderful and so versatile in the way we can make them. Smoked Gouda Yum!!!

    I've used thin uncooked bacon to line the sides of metal muffin trays. Works most of the time for removing the egg bites and kinda makes an edible wrapper.

    These were excellent! I made one batch as written, then mixed the cheese into the batter rather than adding it on top, and added a few dashes of hot sauce to the batter as well. A winner for sure! Thank you for the post, made my morning brighter 😊 and more delicious, and saved me a bundle of money as well.

      Good ! I can't have basically any cheese and my husband not much, not often, but he hates eggy tasting things ( not that I love eggy flavor myself.. ) so making anything like this ahead to reheat later isn't usually worth it for us, as without the cheese, they taste less yummy and emphasis on the eggy when not 100% fresh.. . I might be starting new job this spring tho and needing on the go breakfast items for it, needed the encouragement to try this, minus the cheese !

    Delicious! Heads up for others: The silicone mold seems crucial. I tried my first batch in paper muffin cups (because I'm a rebel), and... call off the rebellion, guys. The egg inside retracted from the paper and made a huge empty air hole inside each one, remaining relatively uncooked on that underside despite cooking maybe 30-40 minutes. (So I produced Magical Flying Undercooked Egg above each empty paper cup).
    I poured a second batch into small silicone molds lined with bacon grease, and that was perfection.
    I only had very small jelly-candy-size-making molds, so used those -- but that actually worked really well for much more literal egg 'bites'! Small but fluffy and tasty with cheese and bacon, one bite at a time. Definitely recommend.

    Added chopped Spinach and poured the batter into a 9" pie pan and baked for 20 mins @ 350F. Great Quiche.

      ​@@daphneweldnichols3846Yeah, I'm all for people learning about high oxalate foods and how to mitigate that, and the symptoms to know in case they're ever ill, but I bet most people can eat a fair amount of a variety of Oxalate rich foods in moderation and if usually soaking, cooking or otherwise treating them in oxalate-reducing ways. Greens : Gently simmer til just done and toss the water out. For someone who loves chopped greens like spinach in recipes, in which mixing in cooked spinach is probably difficult, I'd drain it well & maybe attempt to spread it out on a towel-lined baking sheet to dry a bit more, then add in a bit at a time during one last folding of the batter. For nuts such as almonds, those trying to heal issues and may be sensitive pry need to totally avoid all nuts & seeds etc. for a long time, but for others, you could rinse well then soak ( in filtered water), for 8 hours min. . Can rinse again, re-cover and soak another 8 hours. Drain and dry n crisp gently in oven if not going to use immediately or as-is. But, one can choose the lowest oxalate nuts instead, as well. Almonds are among the highest, macadamia are low I think, and Vitacost sells a "milk" made of them, called "Milkadamia" ( or a c instead of k, idk/recall). Expensive but VC has whole order or food or bev. discount codes on occasion. One can make their own too of course - better, pre-soak em for all the reasons even tho low in oxalates- and health food stores who keep their nuts cool and sell in bulk are good sources, or packaged from V.C. too. I can't handle much casein/high histamine dairy, so, sometimes I need options is why I'm sharing this for whomever else can use it... .

    I beat my eggs pour into muffin pan drizzle with 1 tbsp heavy whipping cream over each egg, then I add chorizo that I cooked with jalapeños and onions and I top with Colby jack cheese. I’ll have to try it with cream cheese.

    Nice work, Chris. After Guga did a test of different cheeses years ago I started using cottage cheese in place of cream cheese. I sous vide mine in small jelly jars, but the clean-up is a pain, even if I grease them wall, and I don't get browning, like you are getting with your muffin pan, so that might just be the solution.       You can try the cottage cheese trick too, but I find I get a much better texture with the cream cheese personally.

      I'm guessing - owning both myself, for other uses - that the small, round pyrex dishes ( which hold a half pint at most , of liquid) would be easier to remove a muffin from than a jelly jar. Still greased of course, or probably a muffin tin liner would fit in em too.. ? I get plain brown paper ones ( dye and bleach free) when I shop online at Vitacost, where I get same in coffee filters (as I often don't see these options in my local stores, plus VC has great prices on em). I'm all for not wasting paper, just thought I'd mention for those times someone wants to use em.

      Yes I’d suggest those. Muffin papers are a good idea too just to be safe with Pyrex being glass which can stick. 😊

    I make egg bites every week! I have not put cream cheese in them yet. Just rotate the meat between beef, pork, sausage snd chicken and chane the type of cheese so they are always different. I use silicone pans, too, so easy to pull them out! Thanks for making this video!

    I like making the Chorizo and egg ones. I'm sure if you have to but I cook the Chorizo in a pan first then mix it in the blender the same way you did.

    I make these with cream cheese, bacon, Redmonds, sharp cheddar, and gouda. Make them in my ninja foodi and my crew chows on them. Can't seem to make enough of them! They are delicious protein bombs ❤❤❤❤

    I barely use my high-powered blender nowadays because it’s a bit of a nuisance to clean (I don’t want to expose the blades to the dishwasher). It’s surprisingly easy to mix cream cheese with eggs in a somewhat deep bowl using an immersion blender.

    @ChrisCookingNashville Love your channel. I love the recipes being on the website, but on my computer the sizing is off and the video images overlap. As a community/church cookbook maker, may I suggest when you are using an oven, to have the instruction state to preheat the oven, or have the preheat step somewhere at the beginning of the recipe, not at the end. Cookbook etiquette. lol Cheers!

    I just picked up a dozen of duck eggs I’m gonna try that. When do you think the ratio would be for all the ingredients maybe a quarter more because the eggs are probably not a quarter to size thank you.

      That would probably be about right. Shouldn’t be too sensitive to the ratios to where a little off would cause issue so that would be a good place to start. 😊

      No I haven’t as Ash despises liver. I really enjoy it but I just fry it in butter to eat it. I’ll have to look at some liver pate ideas. 😊

      @@ChrisCookingNashville Liver pate or liver sausage is how I get my liver in. I would like a beef liver version (more nutrients) since most commercial versions are not beef liver---mostly chicken and/or pork.

    I didn’t see you use salt. Did I miss that or is there enough in the other ingredients that you don’t need it? Looks delicious.

      The other ingredients provide the salt, but you can always add a little if you wish if you’re not using salty things like bacon. 😊

      You can try and I think it should work. I’m not sure if the egg will stick to the papers some since it’s a liquid at the beginning or not.

      I've cooked egg muffins using paper so you can do it but the paper stuck to the eggs and was hard to peel off. I have silicone muffin cups now, and the egg muffins pop right out. I don't butter them beforehand either. The silicone muffin cups are really easy to wash as well. I cook 12 muffins at a time and keep them in the fridge for breakfast and snacks. I generally eat them cold. 🩵💙🩵🇨🇦

    NOTE TO SELF……..put your silicone muffin pan on a metal sheet pan BEFORE filling them with the egg mixture 🤣

    Has anyone tried doing these on the convection oven setting? I've heard it is more gentle for cheesecakes (and this uses eggs and cream cheese). Thanks!

    I’d like to make a big batch even though I’m just cooking for one. I hate cooking breakfast (too groggy) so if I could just pop one of these out of the freezer in the morning, it would be great. Thanks ❤️🐈‍⬛😎

      Just throw a mention out there in one of your videos and you’ll probably have commitments to buy before you even print one page. Just remember add some disqualifiers about not being a dietitian and blah blah blah. You are actually giving recipes for healthy meals than you can buy packaged or boxed. The government wants everybody fat, tired and sick. Thank you for all you do!

    #misssedopportunity to add NOW brand egg white protein powder + beef collagen powder to the mix. I actually do that for meal replacements, and minced meat(s).

      Maria Emmerich says it’s safe and that Silicone is made from glass not plastic. She has info on her website

    I usually make these in my Instant Pot but I think I'll try the oven too. I can't believe Starbuck's actually makes and charges people for these!!! Ridiculous.

      Changes depending on what toppings your in hen. Cream cheese has trace amounts and eggs have almost none so it’s mostly just what you decide to add to it.

    I am confused or don’t know what I’m doing. I push the link for your recipe that takes me to a long list of recipes by different people for egg bites. I find your egg bites and select it, it takes me back to your video, so right back where I started with out a recipe. ???
