    One cassava dish is called gari.

      The roots are dug up, peeled, and soaked in water for a few hours. They are then chopped up. The pieces are put into a bag with heavy weights on top. After three days, the bag is opened and the cassava is spread in the sun to dry. Palm oil is added, and the cassava is roasted. Gari is ready to eat when it is crisp and dry.
