Hi, Nate, So happy to find you. My mother's pies were great and she taught me. Over many years of dieting and not eating/making pies I forgot the times and temperatures. I did remember to always use lard sometimes substituting a tbs of butter for one of lard. As soon as I finish binging on you past shows I will make one. Your other tips were very helpful. Nate, to me, the first under cooked pie base looked no different from the extra worked pie base. It’s a lot of additional work. Surely those commercial pie makers don’t do all of that work to bake a pie?

Great advice! Do you have any tips for frozen pie crusts? Baked a Sweet Potato Pie yesterday and the bottom is not done at all. Can you pre-bake a frozen one as well, even though the filled pie needs to bake 40+ minutes?

Yes. A frozen pie crust can be pre-baked. The sheet pan method works too.
