My take on why so many people get way more exited about violin players, is that it's pretty rare to see and hear violin players that play anything else than classical music. Let alone to be able to play swing and a groove.
The vast majority of guitar players I know come from a different background. Most of them know at least how to play blues, funk and/or jazz before they even get professional education.
So most of them are already familiar with swing time feel, off-beat accents and syncopated rhythms.
Elements that are even common in a lot of pop and rock music.
Actually, I don't know many types of other music that is so straight as western classical music.
In these other types of music improvising or at least playing things on a different way is also pretty common.

My experience bears out your comment (paraphrasing from memory) that playing jazz on violin requires you to think about the notes and their relation to the harmony in a way that guitarists don’t need to do (they can improvise using phrases based on their knowledge of fingerboard shapes).
This was a big part of my own learning when I shifted to gypsy jazz mandolin from guitar.
