A young woman I used to work with has 3 little ones and she just started making sour dough bread and other breads, rolls and cinnamon rolls from scratch. She was nervous when she first started making it but now makes them all the time.

Gina you speak so slowly just like my American friend. Are you really that zen?😜You nearly put me to sleep. I'm a New Zealander and we don't speak slowly. Great recipe that I've wanted to try for ages.
Can you get it to the point that you can make bread with it? Once it is to that point, the left over starter can be refrigerated and kept for months without feeding it. If a grayish liquid is on top of it, it is still ok. It just means it's hungry and needs to be fed. That gray liquid is called "hooch" and can just be stirred in before measuring. My starter has been alive and kicking since March of 2020. Good luck with yours!
