Can I ask, With "Pine of the Times", Why encouraging hop creep to get to 1.006? Could you not change mash temp? and dry hop say at lower temp? Curious on pros and cons.
Embracing hop creep and understanding that it happens can work to your advantage. This is being deployed more in commercial beer as the understanding of this deepens. With this recipe we wanted a dryer finish so using the hops to help us achieve this worked a treat!
