The dark tef we call it "key " tef it is rich in iron. The white and the red tef both just different verity of tef. Here in the states the white tef is usually not 100% tef . It is mixed with corn or barley. The pure white tef is much more expensive and affordable only by affluent people back home.

So for this if you who don't know teff actually comes in variation of colors! It grows in dark brown, light brown and also white so in Ethiopia the white one is the most expensive and the dark brown the least expensive. So injera usually varies in color depending on which kind u you. Here in the states they started harvesting it but only the dark brown one, so that is why you get the dark brown if you want only teff injera. I hope this helps!

I think a lot of Sudanese people just call Injera “Kisra”. I could see where the confusion comes from lol. I’m south Sudanese and that kisra that’s homemade - we call it “Yot Yot” in my native language. I love injera btw. I prefer it over kisra.

I don’t know a lot about Injera. Definitely not as much as my mom would she’s from Gambella. The Injera my family eats is lighter than the one you got. It’s just a bit sour. But I don’t have any other injera to compare to.

The one that's not sour has a different name and different uses. Mostly eaten with milk or yogurt at night
