How To Make Turkish Pide (With Vegetarian Options)

  • Turkish Pide is one of the most popular bakery products you can see in the bakeries, restaurants, and stores. There are many topping options but maybe the best one that goes well is a minced meat topping with vegetables. In the bakeries, they probably make it with much more simple dough but in-home versions we use yogurt, oil, and milk to make it a more tasty and rich dough.
    For vegetarians for the dough, you can make it with simple yeast, water, and oil dough. Alternative topping choices would be onion, spinach or onion potato filling with seasonings.
    If you are not vegetarian you can sprinkle mozzarella or kashar cheese over the minced meat or spinach filling and for an extra taste you can crack an egg over it just 5-6 before you take out from the oven to have a sunnyside egg on top :) Of course for that the size of the pide should be big enough. Or just whisk the egg slightly and pour some over them :)
    Ingredients for the Turkish Home Style Pide:
    For The Pide Dough:
    1 cup lukewarm water
    1 tbsp dry yeast
    1 tbsp granulated sugar
    1 cup mix of lukewarm milk and plain yogurt (If you don't have yogurt add milk :)
    4-5 tbsp olive oil
    about 6+1/2 cups or more flour (Don't add all at ones, after it begins to come together add more if needed until smooth, somewhat sticky, elastic dough)
    For the meat filling
    1 big onion (diced)
    4-5 tbsp olive oil
    500gr. ground beef
    1 tbsp tomato paste
    1/2 tbsp pepper paste (optional)
    1 tomato (peeled and diced)
    3-4 sweet peppers (chopped small)
    about 1 cup mushrooms (chopped in small cubes)
    salt, red pepper flakes
    For the baking tray: baking paper or a sprinkle of coarse semolina or cornmeal

    Good evening from Oregon in the United States. I wanted you to know that my husband and I spent this evening making these delicious treats for our dinner and we followed your recipe and it worked extremely well and they turned out just beautiful. I reduce your recipe a little so we only made six of them but we used just like you did lots of good things and we followed your directions and you made it so easy beautiful just beautiful and I gave two to my daughter and her fiancé for a treat and they were very happy to thank you so much for your great videos and I hope you do many many more

    This looks so good. I think I’ve seen it with the buttered edges and sprinkled sesame or black seeds on the outer borders of the pide . I have to try making this soon. You have so many great recipes. I’m in love with your channel and Turkish foods.

    I made this for dinner last night and the taste is very authentic. One thing I did not do was let the meat mixture cool to room temperature and had a mess on my hands for the first two pides. Lesson learned! Thanks for the great recipe!

    Thank you, for considering us, vegetarians. In india majority are vegetarians. I would add something like potato chunks or mushroom or mixed vegetables. In india we would add some more spices. We may also add carrom seeds to the dough.
