Pasta Cinja is a childhood favorite of mine. My maternal grandparents came from Calabrian as did a lot of the Italian immigrants where I grew up in Oelwein. It was served at weddings, funerals & at many other times. We never used soppressata, or caciocavallo, just mozzarella. & the meatballs were made with beef.
So good 💯 -we omit the eggs & use fontina & mozzarella Parmesan Romano👌 Napoli🇮🇹

This dish is packed with protein , the carb/protein ratio is perfect , just what the doctor ordered , I'm sure it's delicious too !!! I googled the Caciocavallo Cheese because I've never seen it .Thanks for the video .
Интересно е, че в България има сирене, което е със сходно наименование - кашкавал, и технологията на приготвяне е подобна. В Южна Италия съм опитвала качокавало и установих, че българското качествено сирене също прилича на него.

@jafallica Опитайте печена паста, в този случай не ви трябва много сос. Той се поема от пастата и вкусът става по-богат. Различно е от варената паста, която също много харесвам, но резултатът е божествен.

Nothing is new under the sun
In fact, but Lidia didn't say she had "created" a new dish. This, as Lidia also said in the video, is a classic Pasta al Forno (baked pasta), typical here in southern Italy. After all, in her videos she does not present her creations, but classic dishes of the great and famous Italian cuisine.
