For once I actually saw a great move! In the sicilian game I actually saw 17. Qb3 rather than Qd4, threatening checkmate and the b pawn, the only "escape" is to totally give up the knight to block the checkmate.

Plus, Qb3 protects your Knight while your Knight protects d5. Chances are he surrenders with Qb3. I have this comment before the end of the video, so it's possible your analysis showed Qb3 as a possibility.

You should submit your first game (not counting the abandoned game) to Levy for Guess the Elo! He'd be shocked to see a 2100+ blunder mate in one in that position

The idea of trapping the bishop with g6 can be dangerous as white gets 3 pawns for the bishop, and the worst he gets is a draw after g6, Bg6, fg6, Qg6.
When the queen takes on g6 don't forget that the king is on h8 so this doesn't come with check, giving black time to defend. With the 3 pawns in front of the king gone, the 7th rank horizontal opens up and either the rook or queen can be lifted to guard the 7th rank. But you're right, a bishop for the 3 pawns in front of the king is more than enough compensation and I'd favor white in that scenario.
In that specific game, before capturing on h7, white has to take knight on f6 but black queen will recapture, and if bishop takes h7, then black queen will protect g6 and doesn't have to lose 3 pawns in the process
