Hi! The sugar is very important to help get the right balance for the meringue. I can’t say that they will turn out well with less, but you can experiment with the filling, use less sugar if desired, but I would not use less for the shells (macarons).

If it’s just for a day, you can leave them at room temp. You can also refrigerate if you wish and then bring them to room temp before serving.
