When you see the desired coffee color in the clear knob, pull it off the flame. Usually, don't let it perk or bubble more than a minute so you don't burn the coffee.

I have the GSI 14 C percolator, and like you said, "it tastes like camping"! No better way to meet your tent neighbors than with a pot of coffee.
