    WHIPPED CREAM FROSTING
    6 ounces block full-fat cream cheese, softened to room temperature
    3/4 cup confectioners’ sugar
    1 teaspoon pure vanilla extract
    1 and 1/2 cups cold heavy cream or heavy whipping cream
    PUMPKIN FLUFF
    1c solid pack pumpkin (NOT pumpkin pie filling)
    1 - 3.4oz box of vanilla pudding mix
    1/2tsp pumpkin pie spice
    1 - 8oz tub whipped topping, thawed
    Mix together pumpkin, pudding mix, and pumpkin pie spice until well combined. Fold in whipped topping. Serve with vanilla wafers or graham crackers.

      Yes! My late sister and I loved 7-minute frosting. It was like eating marshmallow fluff, but not as sticky! Neither one of us was much of a baker, but we made it successfully many times.

    Food coloring trick: Take a little of your icing (like a couple tablespoons) and put it with your gel coloring into a separate bowl and microwave it for about 10-15 seconds until the icing is melted give it a stir then reincorporate with the rest of the icing. Usually it will help boost the color, those dyes are water soluble so when you put them straight into the icing there's not enough fluid to fully incorporate.

    I love the ghost cake, it's very clever! I'd absolutely buy that cake baking dome forming thingy for my weird kitchen gadget collection! I used to bake a lot of cakes. A long time ago, I bought blue food colouring powder from a bakery. I used way too much in my cake. My guests went home with dark blue mouths and the next day... well, let's not go there.😁

    That fluffy icing looked like my dad's favorite 'Comfort Frosting' from the old Betty Crocker cookbook (it is one of the variants of White Mountain Icing). You can't make it when it is humid, the weather must be dry. You have to really pour that hot sugar mixture in very slowly and yes you still get the syrup on the bowl edges. The fun thing is that on the 2nd day it develops a crust and takes on the flavor of divinity. Mom always made Dad's birthday cake with that, white layers, coconut in the middle and coconut added to the top. The ghost would be yummy with the coconut. Your dome cake pan set looks like it was fun to bake, I'm sorry I never bought one years ago. Better hit up ebay! Thanks for the fun video compilation and hope your time away has been relaxing.

    These all looked like so much fun to make! The white spooky pretzels almost look like the aliens from Sesame Street, I feel like I could dump fuchsia or bright blue jimmys on top and walk around with the plate saying yip yip yip-yip-yip! XD

    The first frosting you made is a cooked white frosting it is important to know that when making the first frosting that the egg whites have to be at room temperature and that your boiling sugar has to be at the exact temperature that the recipe calls for, or it will turn out in this case case to be a meringue. My grandmother taught me how to make this. And when going to Johnson and wales culinary institute in providence, the chefs taught me how to make the three different meringues as well as a full proof white cooked icing. You did an awesome job. Wish i could get the info to you about the 3 different types of meringues to make.

    A tip from a class i took many years ago is to freeze the cake before decorating it. I'm glad betty crocker cake mixes have stepped up their game. duncan hines used to be the best. I appreciate truth on youtube if the shtf or not we all have those days.

    I love vintage holiday desserts. They were homemade and therefore not perfect, and they were just more innocent and fun (in my opinion). My Mom used to make a homemade coconut Easter bunny cake every year. No matter how I make it, I can't recapture that taste from my childhood.

    I'm very glad you did a Halloween compilation because I hadn't seen any of those recipes.
    I've been dipping treats for years and have never used a dipping scoop. I will have to get one for the upcoming holidays.

    Love this, I’m gonna make the pretzels this year thanks to you.
    Try measuring flour, powdered sugar, Bisquick etc. on a sheet of parchment or wax paper so you can pick the paper up, make a v, and slide the overflow right back into the package. I have one piece of parchment folded in half I use over and over for this.

    Loved how you saved the day with changing the icing! I would say half of the time when cooking or baking, I’ve had to tweak things! Glad the last frosting turned out alright with the cake!
    Must say, I’ve never used box frosting mixes, have used the canned frosting! Used to eat the chocolate fudge frosting with a spoon if any left over. Usually had to fight with my sister when younger, and my children when I got older! Lol!
    Must say, would love to do the pumpkin fluff dip! My son would yum that up! Lol!

    That dipping spoon looks handy! I've always dipped my pretzels at Christmastime using two toothpicks with both hands. Your way looks much easier!

    Your “coming attractions” captions were ALMOST the best part. 🤣🤣🤣 I’m still a new enough subscribers that I don’t recall the ghost video the first time. So about that fluffy white icing? Since you have vintage cookbooks, you probably have a recipe for Seven Minute Frosting somewhere. That one does involve you standing at the stove for seven minutes with a hand mixer over a double boiler but it doesn’t involve having to cook syrup to softball stage. I think it might have the texture that they were looking for for the ghost cake. 👻🎃

    Hello, my favorite recently found vintage cookbook is Encyclopedia Of European Cooking by Musia Soper, from 1962. Mostly simple recipes that are based on readily obtainable ingredients. Very well edited. Tons of recipes. Organized by country including Bulgaria and Russia. Uses contemporary British measurements like a gill of broth and a suspicion of garlic. It's quite a relic from the pre-Julia Child era. Not many pictures, but the ones in it are precious. Sometimes available used. I paid about $15 for my own, and about the same for another copy that I gave as a gift.

    Molten sugar - just soak in water. It’ll come off! I love be some good ‘ol buttercream. Homemade! Easy and quick and can be adjusted for different needs. The tub of frosting from the late 70s and early 80s was so hard (so soft use a paper knife my butt). Pro tip with the frosting tub that I learned on my own - mix it in the mixer until fluffy. It mixes some air into it (if using a chocolate or a colour end frosting it will lighten in colour) making it softer and doubling in size.
    That retro pumpkin cake. It was everywhere!!!

    Yes, the sugar syrup was too hot. You just needed to stop at temp and immediately get it into the egg whites. I think that is also how you make an Italian buttercream and its sooooo good.

    I use to like buying the powdered frosting mix. It was really good. I am scratch baker but that was good stuff. I have problems with the fluffy white frosting too. I'm glad I'm not the only one that had issues. OK. Edit. I only used the chocolate frosting mix.

    Hi - love this longer video even if it’s recycled! Question, or maybe suggestion for a video - you’ve made all these wonderful recipes, some hits and some misses. You’ve mentioned “making something again,” (and NOT making it again lol), and I’d be curious if you have any ‘go to dishes’ retro, or otherwise, for personal get togethers…. i.e., what do you cook for holidays, or are you know for a special dish (like your nachos you make). Anyway, just an idea and thank you for your wonderful videos!

    The pumpkin fluff recipe would have been a great filling in the jack o lantern cake. I realize they were probably from different videos. I need to find one of those fill cake pans. I have a checkerboard cake set, those are a pain in the rear to use but the effect was kind of cool. I only used it maybe once for the checkerboard effect. I used to work as a cake decorator at my local grocery store and that cake turntable just brought back the memories. It was my favorite job I ever worked at and I was heartbroken the day my boss fired me.

    You will have crystals when you add the boiled sugar, it should not effect the outcome unless you scrape it into the frosting

    Hi Anna ! This ghost cake is becoming a real challenge!!" But I know you can do it so it should come out good! Seems like alot of steps to make this cake !! Sugar cubes to make the flaming eyes ! I Google seach ghost cake by Betty crocker it's from boys and girls cookbook from 1975!!

    That pan would have come in handy when I tried to make a basketball cake once. It was about as orange as yours, but I think it tasted better that way!

    Just a FYI, your. Ado syrup bottle should have a recipe for boiled (fluffy) frosting on the label.

    Can you help me figure out what am looking for? It's sort of like a millionaire bar, but it's not caramel in the middle. The top is chocolate (semi-sweet) and the middle is creamy white-ish thick custard (firm not creamy), and the bottom is graham cracker crust-ish, but has a bit more body than just plain graham cracker crust. The bars as I remember the were about 3/4 inch high. I'm not sure if coconut was involved, but could have been. Any ideas?

      It sounds like this could be similar to the Fudge Meltaway Bars from Betty Crocker’s Cooky Book. They’re very similar to Nanaimo Bars.

      @@cooking_the_books I am going with Nanaimo bars. My mom used the Cookie Book a lot, but the middle (from your other video) seems way too "Oreo filling" where as what I remember was very thick pudding like. Also the top was definitely not unsweetened chocolate. Thanks.

    You could have used marshmallow fluff too.
