Even if this wasn’t the case, Shirou saw Archer’s memories and saw Archer’s UBW in action at least once (twice in the anime). So it’s possible that he managed to catch a glimpse of all the various blades and stored them in his Reality Marble.
It makes sense here as Archer explains it, bc it’s an actual concept in Typemoon lore. They’re the same person, so Shirou is able to absorb knowledge and skills from his other/future self “Emiya” (who’s from a different timeline).
The amount of camera movement in this scene is very impressive since blending CGI and traditional animation is one of ufotable's specialties. It's an animation method called "Layering" I believe. They use this a lot in the majority of their most recent projects. It gives the scene a feeling like objects are moving across an open area instead of still shots for the background with only the characters moving. Camera movement options open up and scenes have more options for showing the movement of the character models and how they interact with a dynamically shifting background. Accomplishing this with the lighting and color shade shifting is also extremely difficult to pull off, but used to great effect in these fight scenes.

Archer explain to him this change during the night after the fight, the 10th night. Next is the long explaination with archer's exact words from the Fate/Stay Night Réalta Nua version : So there's a scene which happens after the first fight between Emiya and Kuzuki, where Emiya uses archer's sword for the first time. After that, Emiya returns home. The next day, (saturday) Emiya goes to school. His body is numb, his whole left size. The day goes by, Tohsaka comes to Emiya's house. Archer isn't and never was antagonist. He is the "broken kindest soul", even after getting into his edgy phase, he is still Emiya Shirou. His bigger regret is failing to save everyone, to be stronger. This is a fight against your own beliefs, Archer wants to know, if he was right or he was wrong.
Not just that, he wants to remember why he made this choice. An eternity of work, of soul crushing murder. He feels betrayed by his ideas because he doesn't remember Kirtisigu. When he does, he remembers the man he was once. Truly a hero. That was always my take away.
