Also this is probably not relevant anymore but hoes are supposed to be the best thing to mine in the potato dimension, since they're for farming. Idk how that works but that was why you weren't able to get iron from the potato ore in the first few minutes
The fletching table system only works if you have access to a motherload of flint. The way to do it is to get one of each type for the first step then fill in the next steps for each of your set until you start getting complete pathways to refine each type. Once you start getting complete sets, you can put hoppers in and I guess use the left over fletching tables for fuel. It was designed to be hard.

Do you know when you Built your Enderman XP Farm when you went down in the water and place blocks. next time place a lava bucket beside the water and it will go ahead and make a line of cobblestone it might be easier next time. and may be a little safer
