TRADITIONAL MEXICAN CONCHITA SOUP - SHELL SOUP (Sopa de Conchas)

- This Conchita shell soup (Sopa de conchas) is a Mexican classic, let me show you my take on it!
INGREDIENTS:
- 2 cups of medium sized conchita shells
- 2.5 tablespoons of Knorr Granulated Bouillon - Tomato Chicken
- 1/2 cup of Del Fuerte Tomato Sauce
- 4.5 cups of water
- About 3 tablespoons of olive oil
- OPTIONAL: Lime, cooked ground beef
INSTRUCTIONS:
- In a large pot, pour oil and heat to Medium-High
- Pour 2 cups of shells into pot and continuously stir to prevent burning until they turn a golden brown color
- Once you achieve a golden brown color, add in the 4.5 cups of water and the granulated Knorr and tomato sauce. Stir until combined.
- Cover pot and soft boil between 10-12 minutes (medium high heat)
- Turn off heat and move away from heat source to prevent shells from overcooking and getting mushy.
- OPTIONAL: Serve and stir in Lime or Cooked Ground Beef for extra flavor, ENJOY! :)

I love this recipe! I add my tomato sauce when the shells are toasted, before the water, for a minute so the sauce roasts into the shells. Then I add quarter an onion cut into 8th quarters while it boils. Fantastic!

My grandma use to make this all the time! Unfortunately she died this past November along with the recipe that she used to make this soup. I had no idea it was a famous Mexican dish, now I am going to try and make this to get a taste of what she used to cook like before she died!

I feel this. My grandmother also passed away in November and made this all the time for my brother and I. I thought it was just something she did. I’m surprised to see it’s an actual dish. I can’t wait to make it and bring a piece of my childhood back.

Substituting the chicken bouillon for better than boullion. It's a vegan bouillon. Tastes just the same as my childhood fav dish :)

Mom makes me use chicken broth instead of water. Might add some water if it needs liquid after the shells swell up and absorb the liquid.
This is how my grandma makes it and i honestly find it better than my moms 😩 ty!!!

Tried a similar recipe, perhaps mine needed 1 more tbsp of bouillon since I used 8 cups of water

Question.? So is it possible to use real tomatoes like blend 2 tomatoes and half an onion or maybe add a pepper.?
Yes that would work as well. Just remember to add some salt because the Knorr powder is what gives it all the salt it needs :)
Yes this is how my mom usually makes it, no tomato paste or canned sauce

Hi Jessica, I would start with one cube (cut it into smaller pieces first then add in). If you feel it may need a bit more then feel free to add some more. I hope this helps!

Hello Ruth! I don’t think the taste will be exactly the same but if you’d like to to give it a try make sure you add some water to dilute the paste and add enough salt to your preference!

My mom would make this with 2 or 3 Roma tomatoes, 1/4 of a small onion, a little bit of munched garlic and mix in the water with salt and chicken bullion to taste. You can try that.
