How To Bake A Green Fig (Banana) Pie | Foodie Nation x Trini Food Designer - Arlene

- Go grab a hand of Green Fig (Green Bananas) because today we’re learning how to make Green Fig Pie.
Yield: 6 to 8 Servings
Ingredients:
Unsalted Butter - 2 tbsp + ¼ cup
Green Figs (Banana) - 2 lbs
Vegetable Oil - 2 tbsp
Garlic - 1 tbsp (finely chopped)
Onion - ½ cup (finely chopped)
Pimento Peppers - 2 tbsp (finely chopped)
Peas and Carrots - 1 cup
Salt - ½ tsp
Black Pepper - ¼ tsp
Evaporated Milk - ¾ cup
New Zealand Cheddar Cheese - 2 cups (grated)
Parsley - ¼ cup (finely chopped)
Method:
Using 2 tbsp of butter, grease a small pyrex dish (approx. 8 inches) and set aside.
Separate bananas from the bunch and add to large pot.
Add vegetable oil and enough water to cover.
Bring to a boil and allow to cook for about 10 mins or until bananas are cooked (a knife should slice through easily).
Strain the bananas and allow to cool until you can handle them by hand for peeling.
Preheat oven to 350 F.
Once you have peeled the bananas, cut into ½ inch pieces and set aside.
Using a medium pot over medium heat, add butter, garlic, onions, pimento and peas and carrots.
Stir and allow to cook for 3-4 mins.
Once the onions become translucent, add the bananas, salt, and black pepper.
Mix well and reduce the heat to low.
Once the bananas become a little softer, mix in the milk and 1 ½ cups of cheese.
Remove from heat, add parsley, mix and pour into greased dish.
Top with remaining cheese.
Place in oven and bake until cheese on top has browned.

Green fig pie always is a boss. I love it with stew fish, callaloo and few slices of zabooka.
I tried it. It was great. I make it whenever I have green bananas in my garden.

Let me end this debate, it's green figs and ripe bananas.😊😊 that being said, the FIG pie looks delicious 😋. I would eat this with some baked chicken, a salad and some red beans.

Well you don't peel off the green fig like you did. You only peel off a thin green flim and keep the remaining white part under the thin green layer. The bright thin green layer hold much pesticide although nutritious. So keep the under layer of the skin on the banana ty
