One of those neat tricks I learned as a food stylist! Some people really make their cookies look perfectly round with this trick, but I like when the cookies look just a little uneven so the edges still look neater but the cookies still look homemade ;)
I guess you're probably seeing bits of the outer layer of the spelt grains in your flour. I don't think they will have much of an impact on these cookies, but you can definitely sift them out. If the amount is significant, I'd weigh the flour after sifting to make sure you have the correct amount in the end. Hope that helps!
