    I live by myself and cooking for 1 can be as much of a challenge as cooking for a family. ( I have 3 adult chikdren)
    When my now ex-husband and I separated he was feeling guilty and he bought me a deep freezer. Now... I cook in big batches and freeze at least one batch of something per week. Right now I have both beef and chicken enchiladas... ham and bean soup... broccoli/cauliflower cheese soup... mini meatloaves ( I simply spray my muffin tins then freeze. Once frozen I pop them out into a freezer bag for future meals) lasagna and tomorrow I'm going to make stuffed shells. It works out great for me. I grew up with 5 brothers and being the only girl I quickly learned how to cook in large amounts. Hang in there Mama... you have to give yourself some extra grace.

      A free guilt freezer? You lucky girl! My ex never felt guilty even when he was. Make sure you have plenty of off grid power to keep that freezer going. These solar storms we've been having more of are no joke. God Bless

    A tip for peppers. I get a bag of the small mixed color peppers, wash them & dry them off. Then I cut the tops off and get the seeds out with a small paring knife. Put them on a tray in the freezer for an hour or so, then put them in a zip lock freezer bag. Then when I need some for a recipe, I can grab the colors I want. Also , I have a legal pad clipped to my refrigerator ( and a pencil), so as I need things or see I'm low, I write it down. I do a big shop once a month when I get my pension. Then , mid month I only need a few things & fresh produce. Being a senior, I order online & have it delivered, so if it isn't on the list, I do without and make something else.

      I pay my bills online so I use the extra envelopes for my menu and grocery list.
      Makes my fridge look a little messy but hey! I'm recycling.

      Yes great tips I git them from my grandmother's n I'm 80 but paid bills at bank after walking there n then they still were able to use the extra envelope ,funny how good things last a long time ....even if only tips !!!

    Bri, give yourself a break ❤ I had 3 kids and worked full time. It is exhausting just getting shopping, laundry, meals, cleaning, gardening done never mind with 7 kids! I really encourage you to find time to exercise as it really helps with your mental health! You deserve I!

    Regarding batch cooking: Something my grandmother did was pre-make cookie dough and keep it in a roll in the freezer, wrapped in parchment and saran or foil. She made a roll each of sugar, chocolate chip, and chocolate chocolate chop. Sometimes she baked just one cookie for each of us, or half a dozen to leave on the counter, or cut one slice into quarters for small tea cookies.

    I have watched u for yrs at this point and I appreciate that u are keeping it real. Sometimes u buy the processed stuff bc it's your sanity. If we loose it bc we are making from scratch organic snacks that isn't healthy for our family either. It's survival. Do what u have to.

    Bri, I am so deeply grateful for this content. I loved your videos before , but your current content meets me where I am in life. The tips I can immediately implement now. We are even starting a family garden this year and was concerned the costs of setting up the structure won't be worth the vegetables we get out of it. You validated the choice we made by confirming that the cost savings comes over time.     I've been blessed this year with an Amish couple opening up a salvage grocery store seven miles from me. So nuts are alot cheaper and a bunch of other things as well. Including soaps etc. 👍 I use to forget to eat when my kids were lil too😉. One of my favorite things to grow is pumpkins because they are big and don't need processing, but rather just being placed anywhere, lasting till the next spring.

    LOVE peppers,, I still have 4 bags diced and sliced in my deep freezer, can never have enough. First time I ever heard of egg roll in a bowl was last week,, seems like you too watch Becky at acre homestead 😄 she is a little whirlwind,,, she just seems to balance her day very well.

    I agree about peppers going bad. I like to cut them and freezing them, often with onions, in small meal size bags to quickly throw into scrambled eggs and sausage bowl or another cooked meal.

    I use the day before I would go shopping as the day that I clean my fridge and go through my kitchen cupboards and pull everything forward in order to put the new stuff in the back. Like you I feel better when things are organized, it seems to make things easier. You are doing a great job with all you have to do. My Nana told me to take care of the little things and the big ones will be easier to handle.

    I loved your tips!! I too place “the forgottens” at eye level, it helpsI also freeze berries 4 days after buying, an alarm set on my phone helps by spreading them out on a cookie sheet and freezing then placing in snack bags or whatever. kids love them frozen or they thaw fast if not clumped together. i never have to throw away bad ones. i do this with bananas cut in sections to after peeling and dip the ends in lilly sugarfree choc. so good

    Great video and so happy you are giving yourself grace and a few special treats. We are older and our veggies go bad because I forget they are there. Great idea to make eye level. I do freeze things too. I have made cookies and then froze some cookie dough using small ice cream scoop and can pull out when need fresh cookies. Making coleslaw sounds yummy. Reminds me I better cut up my cabbage tomorrow. Enjoy your cookout

    It's super impressive that you express the areas that you find hard (same for many of us); that you forget to eat, etc, but still plan for when you're hungry and on the go. I too am very deliberate and strategic about my grocery shopping.The difference is that I am shopping for one, just me; you are doing it for you, your family, your church, your friends, and those who support your family. Your life hasn't been easy especially over the past eighteen or so months (I've been following y'all on YT for a bit), but you have persevered with such utter grace. You are making a difference. Others will see that is okay to have a hardish day while still loving the wonderful moments within those days. Blessings Bri and fam and all the best.

    Get the kids to make mini cupcakes or muffins and freeze them in small bags, 3 per bag is what I used to do. They are more economical and kids are happy when they make them themselves. If you get a plain cake mix you can add your own flavouring, ie, grated apple, zucchini, or carrot. Put a teaspoon of cake mix then a teaspoon of jam, top with a second teaspoon of cake mix.

    Def find a hiding place for those special snacks. You’ll want a stash of them for when the power goes out.

    A simple and easy inexpensive meal is easy chicken and rice soup (saute carrots, celery, and onion add 2 tsp italian seasoning and a bay leaf then add in one boneless chicken breast, saute lightly do not brown. Add 8 cups of chicken broth and bring to light simmer cook till chicken is cooked through, then remove from pot and shred. Add 1 cup of rice cook till done then add the shredded chicken back in. Super quick and easy. For a large family may have to double or triple. I make a loaf of no knead cheese jalepeno bread and a salad and its a meal everyone loves quick easy and cheap!! Can add in other veggies or lentils beans but i keep it simple. I bought all ingred for the entrel meal at Aldis for 27.43 including the bread ingred and salad and fed 7 people!

    If you love sparkling waters - look into a soda stream! We got one and we make sparkling water with a bit of fruit juice for our treat drinks. Much cheaper than buying canned drinks all the time!

    Love Aldi. Unfortunately, it's a bit of a drive away from home so I only go when I plan 3 or 4 errands in that area. Bri, I never feel hunger, and understand how you forget to eat. I eat to take meds, that's 2 meals a day for me! I'm starting my pepper plants this week. Have a blessed day

    Longtime follower of the channel, so happy to see you and the children back. What a beautiful home you have, seems so warm and inviting for the kids! Just wanted to pop in and say I'm absolutely LOVING the new feel of the channel. Having a homestead and animals is a big dream of mine, but has never been where I'm at (yet) it's so nice to watch such relatable Mama content from a homestead Mama I already knew and loved!
    Our freezer recently broke, luckily during a month of freezer and shelf cooking and nothing was lost. We're saving for a new one, and so have had to get used to using a small fridge freezer again. I haven't been able to batch cook any casseroles or anything, but have found burrito, breakfast burrito, spaghetti sauce, mini meatloaf and meatballs work our great in the small space.

    Thanks for reminding if the sausage veggie rice bowl. I just bought 3 pans for 1-2 servings. 1 small roaster an,1 enamel skillet up to 4 servings , a square no stick griddle and stainless wok . Its do much easier for me too makes meals now. If I make burgers I cook 2-4 and putting 3 of them half cook too warm in the microwave, 4 chicken tenders for lunch & dinners. And will be making homemade egg noodles. Good bless you all for sharing. You all brighten my dull days. The children are growing up too nice young ladies and gentlemen. It was nice too see the children helping you with the meals.

    chicken feed has more than doubled we have to get several dozen of eggs per day to justify keeping them so sad that it's not likely to get cheaper thx for the tips

    We are nuts over Bubly. A few months ago, we got a Soda Stream, and while the upfront is up there, over all, its much cheaper. Bubly is $5.79 for an 8-pack today. I love the savings.

      @@susanjones2276 With the Soda Stream, you don't need to buy the Bubly... syrup, for lack of a better word. I like to pour plain carbonated water over frozen fruits; so yummy and a really healthy alternative.

    I love Aldi! My local one (Torrance, CA) has frozen turkeys for 49 cents a pound. I cooked one yesterday and today have 7 pints of turkey meat in the canner. The bones simmered in the crockpot all night into bone broth; I picked the meat off the bones and that turned into soup along with some of the broth. That and the left-over soup will fill the canner tomorrow. Many meals on the cheap!

    I have found that if you buy frozen item in the off garden season they don't go bad and they are processed fresh and in freezer

    We have mostly replaced sour cream with palin greek yogurt. You get the tart taste, but maybe healthier?

      Sour cream and Greek yogurt are equally healthy if you can tolerate dairy

    Or wrapped in croissants and baked
