I like how people in the comment section hates cheese now. Why would you stop eating cheese just because they put some bacteria and fungus in it? 1. It won't kill you 2. It doesn't harm you in any way 3. You eat dead bugs, bacteria, fungus and mites EVERYDAY in your whole life without even knowing it. You can't escape from it. As long as you survive, then eating cheese is fine.

Not really gross _per se_ but seeing these pellicles grow on wort/beer is wicked. On a completely different note, I find it interesting that "Rothschild" is pronounced "roth[s] child". Coming from Germany I am used to pronouncing it [ˈʁoːt.ʃɪlt] (stole that from Wikipedia) pointing to its German roots of "red" and "shield". The two different pronunciations suggest completely different meanings :)

There's a cheese that's banned from america (I think last time I hear it was) were you set cheese out in the sun for a couple of day and let fly lay eggs on the cheese and the eggs hatch into larvae. So basically maggot cheese. You're supposed to eat the cheese with the maggots alive....oh and its a delicacy in a country. Yum.....

The bacterial genus _Penicillium_ has about 300 species, not all of them produce penincillin, I don't think _Penicillium roquefort_ produces the antibiotic

Only specific microorganisms will make people sick, there are hundreds of species of fungus and bacteria in our guts. It's not like only because they're bacteria or fungus that they will make a person sick, if that were the case, then we would not be able of eating mushrooms as an example.
It would likely become toxic, you need to control the types of fungus and bacteria. Many microorganisms lurking in the air produce very toxic compounds.
