  • How to make Iraqi bulgur kibbeh
    Kibbeh is considered one of the best foods known in various Arab countries, especially in Syria, Iraq, Palestine, Jordan, and others, and there are many ways to prepare it, including: forming it as discs, or spreading it in the tray, in addition to different fillings according to the desire of the housewife and what is available to her. From the ingredients, and in this article we will review the delicious bulgur kibbeh in the Iraqi way, in addition to the cherry kibbeh.
    Iraqi bulgur kibbeh Ingredients Ingredients for the dough: a kilogram of bulgur, and beef cut into cubes. Two onions. One teaspoon of each: nutmeg, mixed spice, and cinnamon powder. Salt and black pepper. Water - as needed. Ingredients for the filling: five grains of finely chopped onions. Eight hundred grams of minced meat. Salt, black pepper, and hot pepper - to taste. A teaspoon of meat spices, and mixed spices. 1 tablespoon or more oil, as needed, to coat the filling. Heavy oil for frying. How to prepare To prepare the dough: Put the meat cubes in a food processor along with the chopped onions, then turn them on until you have a smooth and homogeneous mixture. Add the bulgur, then pour the water gradually while continuing to mix until you have a cohesive dough. Add black pepper, nutmeg, salt, allspice, and cinnamon. Cover the meat mixture with a cloth dampened with water, then set it aside until you use it. To prepare the filling: Heat a tablespoon of vegetable oil in a large saucepan, then add the minced meat and onions, and sauté them together until the meat is tender. Add black pepper, meat spices, hot pepper, mixed spice, and salt, and mix the ingredients together to homogenize, then remove the pot from the heat, and let the filling cool down. Take a quantity of the dough, and shape it with your hands so that it becomes spherical in shape, then make a cavity in the center of the ball, put an appropriate amount of meat filling in the cavity and close it, and reshape the dough again to become a disc of medium size. Repeat the previous step until the amount of dough and filling is used up, and to facilitate the formation of kibbeh discs, make sure to wet your hands with a small amount of water so that the dough does not stick to your hands. Heat plenty of oil in a deep frying pan over the stove, and fry the kibbeh discs in it until they turn brown. Extract the tablets from the oil, and place them on kitchen paper towels to absorb the excess oil. Cherry Kibbeh Ingredients Five hundred grams of beef thigh meat, finely chopped. Sixty grams of onions. Twenty grams of mint. A pinch of cinnamon and sweet pepper. Three hundred grams of coarse bulgur. Eight cubes of ice. Fifteen grams of pine. Seventy-five grams of cherry jam. Six grams of salt. How to prepare Soak the bulgur in cold water for ten minutes until it becomes soft, then drain it and dry it from the water. Mince the meat using a meat mincer, and mince it again until it becomes very soft. With the minced meat, add: onions, mint, bulgur, salt, and spices, then rub it with ice cubes, and set it aside until it rests. Make the dough in the form of kibbeh discs, then fry them in plenty of frying oil until they turn brown. Cut each kibbeh in half lengthwise. Heat the cherry jam in a pan, and spread it inside each kibbeh. Decorate the face with pine nuts, and serve it.
