    When you're in the dumps...what's your go-to meal to cheer yourself up? I also mistakenly said pecorino is from a "different cow." I meant to say different animal. It's a sheep's milk cheese. Like my friend Nigel says, "Bad day at the office 😂"

      Think my feel good dish to go to is my Baltimore Crab Cakes with Old bay of course and Board Walk French fries with salt and vinegar. Puts a smile on everyone's face simple to make ☺ I grew up on V8 in meat loaf old school 👍

    I made this tonight but changed 2 things: 1. I added half an onion to the sauce process, but more importantly: 2. I made the meatballs 1st and made the sauce in the frying oil that the meatballs came from. Delicious!

    OK, I think i’m a pretty accomplished home cook. I’ve gotten old enough and long enough working hard enough to the point where it clicked. I have to honestly tell you I think this guy cooks some of the the best pasta and sauce as good or as close to as good as anybody I’ve seen or tasted. Unlike videos that are too long and chatty he gets to the meet of the matter and gets it done., I appreciate his effort with these videos. Keep making em. Thanks

I think the thing that stands out is your editing and how cool it is - you make it easy to follow along and simple enough that it’s encouraging to try it ourselves. The human aspect of this video was so great too - videos can seem so robotic from some creators and churned out.     I like to make hot wings for myself whenever I'm feeling like I need some self-care. That's one of those meals that I can just totally zone out with.     Rigatoni is one of my favorite pastas, except that it always seemed that it would lose its structural integrity. When you said to only cook it for 7 minutes instead of the recommended 12-13 this was a revelation for me. That way once you finish the pasta in the sauce it is at the perfect al dente!!! Thanks

    Sorry you’re having a down day my dude, I’ve been having a lot of those lately so I feel you. I’m glad that you were able to pull yourself up and still put out some content, it’s always something I look forward to and I appreciate you.
    As for my go-to dish, it depends on how hard the depression hits. If I’m struggling to even get out of bed I’ll usually do something simple like jambalaya or steak. If I really want to tell depression to go fuck itself I’ll make carbonara or Monte Cristo sandwiches.
    Cheers to almost 2k brother, keep your head up.
    Edit: also enchiladas or lasagna with homemade sauce, can’t believe I forgot about about my lay-in-bed-and-cry staples.

    Wife and I made your meatballs and they were the best. We live in Arizona so we cooked them on the Traeger and then added to the sauce. Didn't want to heat the house up. They were so tasty. Thanks for the recipe. GO GIANTS!!

    My favorite thing to eat that always cheers me up is Portuguese Bacalao. You and I make our meatballs and sauce almost exactly the same way. I add a little fresh parsley to mine

    Whatever people say here in Italy, I honestly like pasta and meatballs. However, we usually put red onion in our tomato sauce instead of garlic, and basil always in the end. Looks delicious ❤

    I have tried many you tube meatballs recipes this is by far the best, my toddlers are fussy eaters the meatballs are only what they ate and left the pasta on their plates. I'm now only coming to your channel when I want to cook italian food.

    When i'm down i'll fry two eggs sunnyside up in grassfed butter and accompany them with white basmati rice. Delicious😋. Its comfort food my grandma would occasionally cook for dinner. We are puertorican new yorkers. I'm 71 now and mom and grandma are gone now but those eggs and rice just bring me back to ny great childhood.

    I've been making meatballs for many years and it took me a long time to figure out a recipe that I really loved. I make them almost exactly the same way you do, minus the cheese because my mom doesn't like it. My grandma always made hers the same way too but she never gave me the recipe so I had to figure it out through trial and error. Now that I have it down, I make spaghetti and meatballs for my brother almost every other week.

    Steve, I love this recipe! More importantly, I love the passion and love for good food that you share with us your viewers. I appreciate that you make some missteps when making your videos and then carefully make notes and re-shoot additional footage during your editing process to make corrections. You're a one-man show doing the job of several people in a crew if you were doing this on a TV show. Keep at it; you're a terrific chef and your honesty is felt as much as your passion for your craft.

    Eggs and potatoes hands down is my fave comfort food. It’s esp easy if you have leftover fries (preferably steak fries) from the night before. Fry the fries (I like breaking them up into smaller pieces) in a pan with butter and onions until they’re crispy and brown and then add the eggs to the pan and scramble with the potatoes and onions. Love love love this dish when I’m feeling bad.

    I know the world is hard most of the time, I used to cook for bambino Italian restaurant, worked my way to the chef position, since then I have become obsessed with Italian food, cooking techniques to make authentic and legit good food for the soul, what I have mostly learned is that the Italian people used what they can get thier hands on .I completely agree with you the better the quality of ingredients the tastier the food I always cringe when invited to someone else's house for speggitt because I know most are trying to plug the hole. I just want you to know that I watch your videos because you are the guy who's house I would love to go to for Italian food. I hope you know that you have ignited my passion for it so I wanted to tell you what ever is bothering you to forget about it!

      Thank you man! forgot to mention that the reserved sauce takes the place of v8 in this recipe so one doesn't have to go buy v8 juice that no one will ever use again. So you just take the sauce and use it like that.

    I have two 'happy meals' - honestly, one of them is pasta & meatballs. The other is something I call Sunshine Eggs - it's essentially a Scotch Bonnet omellet cooked in coconut oil, in a flour tortilla wrap. It rocks.

    You’re adorable lol so honest and open, and I’m sorry you were having a tough day … it happens.
    My go to comfort foods are my childhood foods. Escarole and beans and a really good Italian semolina loaf ya know crunchy crust but moist and delish inside…. In a word, yum 😊

    I cook Italian for comfort food as well! Just a basic tomato spaghetti cooked perfectly with the right ingredients does it for me.

    Number one thing that makes it all better after a bad day... Going cheap, just grilled cheese with goat cheese and cheddar and a bowl of cheap Campbell's tomato with extra extra black pepper. I'm sure there's a better tasting method of making grilled cheese and tomato soup but that's my old tried and true.

    To cook with love i always enjoy a small pork roast with roasted sweet potato, carrot, potato and gravy. Always makes me feel at home when i am far from it

    Felt cruddy one night after doing 16 hours at work luckily after 3 weeks of working everyday I had one day off was a holiday. I cooked my first brisket in a smoker. Followed a guide, but was so proud of the moment and food when it was done. Sometimes food is the best escape from the world. Loved the video sorry you had a bad day man.

      I like them both. Browning gives a slight crunch, but I like them not browned too. Depends on the mood.

    When I'm really down and can't paint or draw for whatever reason but still have access to my kitchen - it's always pasta. No half-measures! Pecorino Romano or Parmigiano, Greek olive oil, fresh herbs and sweet tomatoes and garlic. The rest depends entirely on the contents of my fridge at the moment, but if there's at least one chilli pepper I can make it work and give myself some love

    When I’m having a crappy day I love a good lasagna or tacos 🌮, but my mama’s style. Home deep fried corn tortillas to make the shells, simple ground beef with garlic, salt, cracked black pepper. Then the trimmings, iceberg lettuce, diced tomatoes, minced fresh onion, and shredded Colby Jack cheese. That is my comfort food.

    I love what are doing and it makes my cooking so much better. Pasta is comfort and my second choice for that last meal would be pasta in a blue cheese sauce.

    I know it’s been over a year since you made this video but I found your channel today and I’ve been binging your videos. My favorite food that helps me stay on top when I’m not doing the best is a slice of pepperoni pizza from a market near my school that does super authentic New York slices

    I'm glad he mentioned the "smell" of the meatball mixture. That was my grandmother's way and it was passed down to me. It's not about 1/2 cup of this, or 1/4 cup of that, you add ingredients until it smells right. If it doesn't smell right, it won't taste right.

    I have made this for my husband with few twists - couldn't find heavy cream cause they don't sell it where i live, so used regular cream instead. Also couldn't find san marzano tomatoes, but found sicillian canned tomates so used them instead. My husband loved the dish, he said it is such a grandma food. :) Thank you for the amazing recipe, i will try your other recipes.
