The beta nerds in the green that look largely like their final skin, some of them look severely depressed. I think that in the final game they wanted to make the nerds seem more ignorant and fully immersed with nerd culture because the tortured and depressed nerds would almost certainly make the player feel uncomfortable with the game.
The red, black and white Bullworth crest was probably decided before the final version, but after the alpha version. It's most likely Rockstar only applied the crest to Bucky's texture before changing it to the final version's crest and forgot to change the crest on Bucky's texture when they made the final version's crest.
Bucky's crest is probably a badge showing he has the highest score on that sumo game because that sumo game machine is red and white. And you have to beat his high score in the campaign

It's just speculation, but the crest on Bucky's vest might be Black, Red, And White. I think that the school was originally going to have a maroon red as seen on Kirby, Mole(Melvin), and Amy(Beatrice). As for the size of the crests I believe it was a texture mapping issue, I had a similar result after trying to change the crest back to The fist with yellow and black.
