I make it mostly with Bacon. The bacon and the Endive cut into pieces. Then bake it together in a pan. But i do cut of the bodem piece and a little bit of the middle of the Endive and don't use that. Because the taste of that is a bit bitter. Or i do it like the chef is doing it but put some ham and cheese on it. so you have molted cheese and baked ham around the Endive. The kid's love both option's. I do have to add i use Dutch bacon called ontbijtspek. And the butcher cut's this up into little blocks for me.

I've seen Chef do many recipes with endive. I wish I could find some when it's in season at my supermarket. I've got a long list of stuff I want to try. Most would be classified as luxury or more expensive ingredients, but this is also one. Some of his recipes for this vegetable look so amazing.

Try it with duck! served pink ofc and if you manage to find red endive it’s even better.
