"Fit for a king". This from the chef who has actually cooked for kings! Being the chef for Charles de Gaulle and who prepared French State Dinners for World leaders, you can be sure that Pepin knows what is "fit for a king!" It's amazing to see how a real classically trained French chef cooks. We are all so lucky.
I've made this 4 times since I first watched this video about a month ago. It's absolutely delicious. You can be careless with it and it still turns out amazing! Every time I've made it, my wife and I are astonished at the flavor that comes out of relatively simple ingredients. Jacques makes cooking amazing food so simple and approachable. A true master!

It is great to see that this world class chef DID NOT dredge the chicken in flour. Flour adds a non sequitur taste to the meat that isn't particularly pleasant. The initial concept of dredging meat in flour before placing it in a hot pan of oil was to reduce hot grease spatter; not to improve the flavor. I think the concept was invented in the days of Escoffier to solve the problem of his line cooks having hot grease spattering in their faces 10 hours a day.

You do know that videos are edited. Do you really want to watch him tidy up? How do you know that the board wasn’t wiped down?
I am becoming completely convinced after watching several master chef's, including Mr. Pepin, that I've been made totally paranoid about the dangers of touching raw chicken while cooking because none of these pros have any fear of contamination. I'm not saying I'm going to go around eating undercooked chicken but pretending I'm touching anthrax and scrubbing everytime I deal with it probably isn't the way to go, either.

Yeah, it really looks like the garnish was cut on the moisture left over by the chicken. Maybe he put the whole plate under the broiler afterwards to sterilize the garnish.

You really should explain to the viewers that you (i hope) wash your hands in between touching the raw chicken, taking the paprika bottle or cutting the chives that you will put on the plate afterwards. Because like this is presented, it looks like a cross contamination recipe.

This looks delicious, except (unless this was cleverly edited) Mr Pépin prepared the chive garnish on the same board as he just chopped the raw chicken.
Was thinking thinking the same thing
I think he did wash it while the chicken was cooking, and put the shallots back on the board after cleaning. All the knives & other stuff on the edge have moved, other things like the oil are back in their place and the board looks like it has some water residue all over it. He always cleans while he works, I'm not sure he'd sit around for 2 minutes just watching the chicken cook without cleaning the board.
But he also lightly contaminated everything after picking up the chicken with his left hand before he even started the cooking process. Hand touched chicken, knife contaminated by touching it with the left while he was cutting the cucumber, contaminated the outside of the oil bottle, contaminated the saucepan handle by holding it with both hands. Hopefully when he washed the board & knife he washed his hands as well, which would probably mean the chives aren't contaminated. But he's very much in don't give a #### mode.
Please shut up and go get a life.

I totally agree! I suspect it's because Jacques is from the days when chef's were craftsmen. Today, so many of these chefs put the emphasis on being entertainers first, with the cooking an afterthought.

Each NEW PHASE of GOD'S WORK always BRINGS a NEW BEGINNING and a NEW AGE.
There are also corresponding changes in God's disposition, in His way of doing, in the place of His work, and in His name. 🙏
No wonder, then, that it is difficult for people to accept God's work in the new age. But regardless of how man opposes Him, God always does His work, and always leads all mankind forward. ☀️
WHEN JESUS CAME to the WORLD of MAN, He BRINGED the AGE OF GRACE and ENDED the AGE OF LAW. 🙏
In the TIME of the LAST DAYS, GOD again became FLESH, and when He became FLESH at this time, He ENDED the AGE of GRACE and BRINGED in the AGE of KINGDOM.🙏
ALL who RECEIVE GOD'S SECOND INCARNATION WILL BE TAKEN INTO the AGE OF THE KINGDOM, and WILL PERSONALLY RECEIVE GOD'S GUIDANCE. ☀️🙏
Although JESUS DID a LOT with MAN, He only completed the REDEMPTION of ALL MANKIND and became the sacrifice for MAN'S SIN, and did NOT remove from man ALL his BAD DISPOSITIONS. ☀️
The complete saving of man from SATAN'S INFLUENCE NOT ONLY REQUIRED JESUS to take on MAN'S SINS as a SIN OFFERING, but also REQUIRED GOD to do a GREATER WORK to COMPLETELY rid MAN of his DISPOSITION, which SATAN CORRUPTED. And so, AFTER MAN was FORGIVEN of his SINS, GOD RETURNED to the HUMAN BODY to LEAD man into a NEW AGE, and BEGAN the WORK of CHASTISEMENT and JUDGMENT, and this WORK BROUGHT MAN to a more HIGH COVERAGE. ☀️
ALL WHO SUBMIT to His DOMINION WILL ENJOY a HIGHER TRUTH and RECEIVE GREATER BLESSINGS. They will REALLY LIVE in the LIGHT, and GET the TRUTH, the WAY, and the LIFE. 💐🙏

I think the veggies are from Jacques' own garden. Assuming he is using organic, grass-fed butter and free-run, hormone-free chicken, I would say that this is a pretty healthy dish.
