Making sweet potato soup - another delicious soup to add to the growing recipe list!

Hi all
Joburg winters definitely call for lots of soups and stews to warm us up in the evenings. We have a good repertoire already ( • Hearty soups and stews ) but we are always adding to it! Today we have a nice sweet potato soup for you guys. Leave out the butter and u8se olive oil and make this a vegan soup as well!
Ingredients
500g sweet potatoes
1 med onion sliced
6 cloves garlic, crushed
4 small leeks
fresh thyme
1 tsp jeera (cumin) powder
1 tsp fine salt - adjust to taste
knob of butter
grind of black pepper
1.5lt veg stock - mix according to
instructions
200ml coconut cream
red chillie flakes to garnish
Serve hot with croutons or a side salad!
