For the Syrup:
4 cups water
2 cup sugar
1 cup honey
1 cinnamon stick
4 cloves
lemon or orange peel
1 teaspoon pure vanilla extract
For the Pudding:
2 cups semolina flour
1 cup light olive oil or vegetable oil
1/2 cup (or more) blanche almonds
1/2 cup (or more) raisins, cranberries or your fave dried fruit
zest of 1 lemon/orange
1/2 teaspoon ground cardamom
1 teaspoon ground cinnamon
pinch of salt
Garnish:
ground cinnamon
ground pistachios
Instructions
Begin by making the syrup: Combine all of the syrup ingredients (except the vanilla and honey) in a small saucepan and bring to a boil. Once the sugar dissolves remove the pan from the heat and add the vanilla and honey. Set aside.
In a wide pot or skillet, add the oil and semolina. Cook over low heat for about 10 minutes, stirring constantly until golden and toasted.
Add the almonds and toast for 2-3 minutes.
Add the dried fruit, cardamom, salt, zest, and cinnamon and turn the heat off.
Pour the syrup into the pudding. Be very careful because it will boil VIGOROUSLY and will release LOTS of hot steam!!! Keep stirring.
Cook the semolina pudding over medium-low-heat for 5-10 minutes. The pudding is ready as soon as all of the syrup is absorbed and the pudding releases from the sides of the pan. (see video)
Transfer the halva into a mold and pack it tightly. Set aside to cool to room temperature and then carefully unmold it over a cake platter.
Garnish with ground cinnamon or with pistachios and serve it with coffee and ice cream.

Thank you for the Lenten recipes. It is making the fast easier.
Thank you for sharing this recipe, my dad used to make this for us
*The sweeter version of indian Upma.* Delicious! 😋
I love how flexible your recipes are Dimitra! For those of us learning how to cook being able to swap out cranberries for raisins or honey for maple syrup is very helpful to know because I am not very creative in the kitchen, yet😅
Thank you Dimitra! Will be making this for our coffee hour at church.
Dimitra, thank you for this recipe. I Love Halva.
I like to make this during lent.😋
Oh my gosh, I have got to make this! It has everything I love!!
In Bangladesh, we call Shujir Halwa.....wow, we cook the same way.....
Thank you, Dimitra. Would also love to know how halva is made using tahini. 😋
OMG I LOVE HALVAH! I have mini Bundt molds that this will be perfect for 😊
Hi I am from India live in USA that’s the way we make too it’s yum
It’s better with ghee!!

*The sweeter version of indian Upma.* Delicious! 😋

❤❤ I will try to make it
Hiiii very delicious 🤤 jabarjast 🔥🔥 sister bhut he acchi banai hai ♥️👍😊 love from India Bharat 🙏🎉🎉
We make 'Halwa' often as it is an easy sweet dish to make, and yes, you can tweak it up with dried fruits, nuts and nice flavours like rosewater, orange blossom water etc.🐞
Oh rosewater, what a great idea!
Rosewater is strong, so use a little....like just a teaspoon only. Another flavouring is to add a little cream or milk to give it creamy flavour and texture.

Mmmmmmmm 😋😋😋 Love Halva!!!
Thanks Dimitra for sharing. Can you substitute butter for the oil
My mum would make this in individual portions in an almond shape, I'll be using madeleine molds.
Making your stifato tonight!
TY Sweet Dimitroula mou! I'll try to make this. I only have I think coarse semolina, molasses, maple syrup, if it's OK? Stay safe❤💙💕
Thanks
Amazing 🤩 how long it last in the fridge?
I am going to make it for my daughter-in-law for Easter, how long ahead can I make it?
I followed your recipe, but there was an awful lot of oil leftover. I've made it a few times before. I don't know if I've done something wrong. I'm not sure anyway it looks okay at the minute fingers crossed.
Is it semolina flour or the cooking semolina?
I use semolina flour for making bread is it the same or the one you use for making porridge:)
Like cream of wheat not flour
@@fayk.2278 She did not say cream of wheat she mentioned Semolina flour

B@@Christinalovescats1958yep
Hi, this is a muslim halva for ramadan....
This is perfect for Ramadan!
It's Turkish luv....
Origin is Iran😊
@@Christinalovescats1958 Yeah, but we introduced it to the world....
No it is not Iranian. It is not even widespread in Iran. It is Turkish and when Turks converted to Islam they deliberately began naming dishes Arabic words due to the love of the Arabic language because it is the language of the Quran.
Me thinks it’s Indian.Turks discovered the wheel.
@@georgekouleris8029 Turks discovered everything....we just forgot we discovered it....
