What a splendid idea to portrait such an extraordinary chef! And wonderful to see his background in the small village, his parents and grandmother, they must be very proud of their son/grandson! A true genius!. This is the future of fine dining by using fresh and clean products and create unique but also down-to-earth dishes. I have to watch these videos after dinner, otherwise I would empty my fridge and eat anything I could possibly find (although not nearly as delicious as Simone's ;-))
