I've been studying croissant for 15 years now. My doctoral thesis is on the crunchiness of the croissant a comparative study in more than 46 different types of croissant in the whole world not just in Paris. I've found that the crunchiest croissant is soo crispy and so soft at the same time: it's the gipsy croissant. When i meet with my friends the first thing I talk about is croissant. My best friend calls me the "croissant nut" and he always says : "oh no stop talking about croissants mate!". My wife always tells me : "Please stop about the croissants...i've had a long day at work". But when i sleep i dream of croissants and their crispiness and crunchiness wakes me up at night. I open my eyes and wonder in the deep hours of the night about the awesomenss of the croissant.

I have been in about 42 boulangeries in Paris in the last 3 months studying croissants. The best croissant in Paris is from the chef Maxime Frederic from Cheval Blanc and the second one is the one from Le Maison D'Isabelle. Try both then tell me if they are not the best. They are way much better than The French Bastards and Cedric.

I'm glad that even a price tag of 1.50 euros is considered expensive for a croissant cause I have eaten many croissants around Paris that cost much less and taste like heaven. I still remember taking a bunch of my fellow countrymen to Angelina (they heard about the hype) and yeah... You really just go there for the experience... not necessarily for the food. Here in my country, croissants and other French pastries' prices are way too expensive and they taste not even half as good. They are considered a fancy snack. For this reason, lucky those who live in France.

Loved the video! The style was relaxed and accessible and the pigeons were entertaining lol. As a bit of a croissant connoisseur myself, I enjoyed the comparison between 4 different styles ranging from the traditional, to sweet, to modern. I totally agree that the butter makes the croissant and I feel that too much sweetness can detract from this. One small suggestion is if when you're referring to a technique like pate de feuilleté I would love to see the term pop up on the screen so we non native speakers can follow and learn something🙂

Agree, du pain et des idées makes one of the best viennoiseries and bread in Paris. And you get that parisian vibe like Angelina (very very overrated but good for tourists I guess). Also try Atelier P1 close to Montmartre. Very good.
It's a privilege to live in Paris and be able to choose between many "best croissant places". I did a test of croissants in Paris many, many years ago along a list of bakeries I had assembled from the Internet. Ladurée was on this list and they offered two types of croissant: "traditional" with lots of butter and a "diet" version (they called it someting different, I just don't remember exactly) with also lots of butter but a little less than the traditional one. Dry croissants are obviously not worth your while. In general I test bakeries by the quality of their croissants. It's quite hard for me not to step into my car, ride to Paris, and start testing tomorrow morning. Ahhh croissants, I love them. Thanks for this so very knowledgeable video about my absolutely favorite baked product.

Nicely presented! The best croissant I ever had (unforgettable!) was in a Café at Sevre Babylonne, next to Le bon marché. It was buttery, not too sweet, heavy, slightly salty, not fluffy or crunchy at all, rather flat.Just delicious!
I have lived in France mostly in Lorraine regione my mom is french But I have been in Paris many times. while I love all patisseries, I found small villages with homemade butter made into crissants some of the best I have tasted.. Voila! merci et mange bien...
Wonderful video, merci! I have to agree with your rankings. Tout Autour du Pain has excellent croissants and breads. The French Bastards became our new favorite on out last trip to Paris. Other other favorite croissants can be found at la Maison d'Isabelle in the 5th, Bread and Roses and Poilaine in the 6th. My personal favorite is the Ispahan croissant at Pierre Hermé. Other bests? Brioche, Chausson au Pommes, Kugelhopf (hint: the best by far is Vandermeersch.)

I've never been to France. But I love French pastries in general, they are the best. Fortunately, we have some excellent French bakeries in Chicago. And I think I have the same expectations for an ideal croissant. I have never seen a croissant like the first one you tried, though. It looks wonderful. If my eyes were the only judges, I would put that one in first place. I even wanted to be a pigeon.
@@rooshi7 Maison Marcel and Maison Parisienne are both in Lakeview. Floriole is French inspired, but I think they only have pickup service these days. These three are amazing.

I was only in Paris for one night so in the morning I went to two bakeries to get chocolate croissants. One was ok and one was way better. Probably nowhere near this level of popularity and perfection but it was on my bucket list!

What is actually amazing in Paris is the fact that you don't even need to go to a fancy bakery to get a great croissant. You can buy a croissant at the average bakery at the corner of your street and have a wonderful moment. And every croissant has it's own identity. Incredible.

there is one rule in France however... You can spot a "boulangerie" that sells Frozen croissants / baguettes from a mile away... this is something every French person can spot. Those boulangeries are a stain on our society... lots of tourists go in unaware and come away dissapointed with their supermarket frozen croissant that has been disguised as a real one. Unless they are making themselves on the day, they shouldn't be allowed to call themselves a boulangerie

And I think I have the same expectations for an ideal croissant. I have never seen a croissant like the first one you tried, though. It looks wonderful. If my eyes were the only judges, I would put that one in first place. I even wanted to be a pigeon.

@@rooshi7 Maison Marcel and Maison Parisienne are both in Lakeview. Floriole is French inspired, but I think they only have pickup service these days. These three are amazing.

I was only in Paris for one night so in the morning I went to two bakeries to get chocolate croissants. One was ok and one was way better. Probably nowhere near this level of popularity and perfection but it was on my bucket list!
never call this chocolate croissants ahah. It's called Pain au Chocolat in most of France, and Chocolatine in the South West of France. There is litterally a WAR between these two names. Don't start a new war calling this a chocolate croissant please

There is a lot of industrial bakeries. The best baguettes or croissants are made in artisanal bakeries.

What is actually amazing in Paris is the fact that you don't even need to go to a fancy bakery to get a great croissant. You can buy a croissant at the average bakery at the corner of your street and have a wonderful moment. And every croissant has it's own identity. Incredible.

there is one rule in France however... You can spot a "boulangerie" that sells Frozen croissants / baguettes from a mile away... this is something every French person can spot. Those boulangeries are a stain on our society... lots of tourists go in unaware and come away dissapointed with their supermarket frozen croissant that has been disguised as a real one.
Unless they are making themselves on the day, they shouldn't be allowed to call themselves a boulangerie

Very interesting and informative! And it gives one an excuse to try many croissants, I would certainly like to make this a fun part of a future trip or a little side adventure when taking new people to Paris or France! I have never had a sugar crusted croissant so I might find that interesting, but also for breakfast everyday maybe you would want something without sugar and not so dripping heavy with butter. I think your rankings were surprising but spot on!
