VEGAN LEMON CAKE *Living Like A Panda*

    You have THE RECIPE and the STEP BY STEP of this vegan lemon sponge cake below.
    We give you the recipe of the typical caserito lemon biscuit but without using eggs or dairy and you will not believe it but it does not lose that rich fluffiness that makes us drool! We have added an optional lemon glaze for the sweet tooth ^^
    INGREDIENTS:
    Biscuit:
    - 260 g wheat flour
    - 1 tsp of sodium bicarbonate
    - 1 pinch of salt
    - 200 g of sugar (you can also use brown cane sugar, panela ..)
    - 60 ml of vegetable oil (if you use EVOO it will be a little strong in flavor)
    - 230 ml of rice milk (you can use any vegetable drink)
    - 1 lemon
    Glazed:
    - 2 tbsp lemon juice
    - 150 g of glass sugar
    STEP BY STEP:
    · The first thing is to preheat the oven to 180ºC since this recipe is very fast.
    · We will start by separating the "dry" ingredients on one side, in a large bowl: We will sift the flour, baking soda and salt. We mix well
    · In another bowl or large bowl we are going to mix the "liquid" ingredients: We pour the sugar, the vegetable milk, the oil, the zest of the lemon and the juice of the same lemon.
    · Mix all the ingredients well until the sugar dissolves.
    · We pour this liquid mixture over the solid or dry while stirring with a rod.
    · When you have a homogeneous liquid medium mass is ready.
    We take a glass container and spread it with a little oil inside.
    · We pour the biscuit mixture.
    · Bake at 180ºC for about 45 minutes. As you know, each oven has a different time so just be careful not to burn the top.
    · Go pricking it with a knife or fork when you think it's done. If it comes out clean and dry it is that and it is done.
    · Take it out of the oven and let it cool slightly before unmolding.
    · While we are doing our lemon GLASSING: Mix the juice with the sugar glass and READY, so d simple.
    · To unmold the cake we help ourselves with a knife separating the edges first. We turn around, give a few touches and leave.
    · Above we will pour the glaze. Before eating it and for it to be solved we will wait about 30 minutes.
    · Cut, serve and ENJOY!
