Oh that sounds good. I have the Ninja Foodi smoker that has been sitting in the box for way too long but I think I am going to try smoking a turkey breast and also a small turkey in it this year. I've been using this injection recipe for years as my goto and really love the flavor it gives.

That wasn't 2 sticks of butter. One was butter and the the other was a stick of Imperial spread which has the vegetable oil in it. It's basically fake butter.

We have one that is similar to this but I would like to put mince garlic in some of our injections recipes and have found it just does not work. I have started using garlic powder instead. I like the stainless injector more mainly because it just works so much better than the plastic ones's. I used to have an injector made to stuff garlic and onion pieces into things like roasts. I can't remember who made it, may have been Ronco, but it broke several years ago. Maybe amazon may have them.
So should you do this injection if you're doing a salt water bath? I usually peel skin off the meat so the skin is still intact so the marinade in the bath gets under the skin.
Im my opinion, yes. I've brined a couple of birds and also injected them. I didn't find the brine did much inside of the meat flavorwise so the injection complimented it nicely.
As far as minced garlic goes. I heated my butter and added fine chopped garlic and simmered until garlic went soft then I munched it with a barmix added a bit of chopper parsley it’s now all cooling down for injection tonight for dinner. Hoping it’s all soft enough to get through the needle. Also did an Asian mix for chicken number 2.
I saw a video where you use clarified butter to make it easier to inject and another where you got the same effect by melting butter and drawing the butter from off the top after the thicker part settled to the bottom. Another did half butter and half olive oil. I've checked out so many versions I'm seeing stars
I actually like the butter and olive idea and may try that. I always used the butter/hot water to keep the injection from solidifying too soon but I'm sure any of those suggestions would work fine.
Making clarified butter is separating the milk solids and water from the oil of the butter. This is known as ghee or clarified butter oil. This oil becomes a solid when it is cold like coconut oil.

We always cook at least 2, sometimes up to 3 depending on the amount of people coming. Frying is by far the quickest way of cooking multiple birds as quickly as possible. I don't fry them anymore though because 1) I think roasted turkey just tastes better and 2) You're turkey is limited in size which means you might have to cook more if you need a lot. I ended up buying the Char Broil Oil-less Turkey Fryer that runs on propane and really like it. It's not really any quicker than the oven but it lets me cook one in the oven and one in it at the same time and no hassles of using oil. If we need more than 2, I just have my parents cook one also. As a matter of fact, my oil-less fryer is getting pretty old and although it still works fine, I might replace it when I find it on sale. BTW, it also works great to cook things like boston butts and roasts too.
That's what I been looking for the longest. A bulk marinade recipe for someone who smoke or fries several turkeys during the holidays. It's crazy the big brands don't sell a gallon jug.

That sounds like a wonderful combination. I tend to only inject turkeys but really should do chicken also. What did you use for the Asian mix?

Plain soy. Sweet soy. Sesame oil small amount. Sweet chilli sauce strained out seeds. Oysters sauce and a little honey. Turned out great.

Inject without pulling the needle all the way out. Pull out enough to change the angle. Problem solved
Saw video doing that and then rubbing it around too. To many holes with actually dry it out

Also, the oil-less turkey fryer isn't really frying, it's more like roasted turkey and it keeps the turkey very juicy.
