My husband was Hungarian, he died in 2018 and he was a fabulous cook, this is the best and my most favorite dish. the only thing I did that he did not was to put vegeta in mine about a tblsp. it is salty too so u need to wait on the salt and taste the sauce first, it usually did not need it. In case u guys don't know it is a ground up vegetables and makes a great taste for any dish, I use it in everything. you can buy it at Amazon in America, just put the word in and it will take u to the page.

Yes, without vegeta there is no soup, stew, stuffed paprika etc etc. But look out fo NO MSG vegeta and now they even have Natura vegeta, i mix two of that one with 1 kg no msg vegeta it is healthier and still the same flavour

My mother suggested to add a little water to the meat mixture so the rice will soak up the moisture from the water and not from the meat. That way the stuffing/meatballs will turn out nice and soft and not dry and hard..
Of course once it's thick .looks good plus I suppose everyone has a different take on it because hungarian food don't always go by a perfect recipe too that's Wat makes it magic and tasty all the time .good luck.
the potatoes is what makes it and u can or cannot use a dollop of sour cream when eating. He boiled the taters seperately with bay leaf and some caraway seeds. about 1 tsp full, it is delicious and eat with the peppers and sauce. OMG
Thanks for your comment! I'm sure it's delicious without the flour, mainly if you have a nice, thick tomato paste/juice. I've always made this way, but I'm open for new ideas - I'll try to leave out the flour.
This is one of the Hungarian dishes which is made several ways, and everyone prefers their own :) But this is what I like about cooking. There is a phrase in Hungary which fits here : "ahány ház, annyi szokás" /as much versions as many households (I'm not sure if it's the correct translation)
Do other countries even sell these pale Hungarian peppers? :) I've seen a lot of töltött paprika recipes with colorful bell peppers and it just looks... wrong :D
Where do you live? In the UK in bigger cities, towns you can find the yellow pepper. Sometimes they call capsicum. In London 100% sure they have Hungarian shops and they used to have it. Also you can buy likely in Polish shops. I were lucky to live and work on areas where they had big cash and carry warehouses where they had often and also in many so called halal shops, some Indian groceries, street sellers... on the countryside bit more difficult, but now I live in a little town on the South of England and in the local polish shop they had in the summer. Also they had international market fair for almost a week and there was many continental food, between them this kind of pepper. I’m guess in other countries you can find some places too. 😊
Now, I understand what meatballs "the size of a 4 yr olds fist" looks like. My mom gave me the recipe, but.....her's (from my memory) were always bigger! Thank you!! I'd like to know better!
That looks really nice. For the rice, will eg normal Basmati white rice do (takes about 16 mins to cook in boiling water) or is 'minute rice' required ie precooked rice?
I used long grain rice and didn't precook it. I've never tried it with Basmati rice, but it could work I think. Some people use precooked rice to make this dish, so it's OK to use the "minute rice"

It's perfect the way you make it. It needs the rántást (roux) for flavor. Don't change anything.

@@kitchenpaprikash3888 We used to make exactly this way. The flour (rántás) is not just for the flavour, but for thickening. Make it more wholesome.

the best rice for this kind paprika is arborio or carnaroli rice.Basmati is not that comaptible with european spices and recepies.
