      Ive done straight to bulk ferment and stretch and fold. Makes the exact same bread just not a lot of ear to the sour dough

    My dought was simultaneously really wet and had no stretch to it at all. I didnt get the dough ball until the end of proofing and even then it flattened out a lot and didnt hold shape. What was i doing wrong? I followed the recipe exactly.
