    Every chef has that one ingredient they are incredibly particular about when it comes to their cooking. In this series, we dive deep into the ingredient Made In's chef customers can't cook without. For Simone Tong, it's bok choy. She’s deeply passionate about this deliciously crunchy, semi-sweet leafy vegetable. It’s a staple in most Asian cooking, and found in abundance on the menu of her new restaurant, Zoé Tong, in Austin, TX. She sources her bok choy carefully, taking the time to find the freshest and best ingredients she can, and she keeps that same spirit when it comes to choosing the cookware that makes it into her kitchen. Watch as she uses our Carbon Steel Wok to imbue the signature “wok hei” smoky flavor into most of her meals. The flames of her wok station are constantly lit, maintaining a heat more than 10 times hotter than the average kitchen stovetop. And Carbon Steel is her secret weapon.
