The way the cooking process is done is very good to avoid diabetes. However I would be avoiding drinking the kanji water because of the starch in it which is the main purpose of cleaning the rice in the first place. It is usually given to young kids with added sugar as a supplement of their early diet especially those with limited supply of milk.
You can have Kanji, after you ferment it. Fermentation gives you vitamin k2 which helps in unclogging your arteries, carries calcium to where it belongs- to bones! There are some prized, traditional recipes with fermented Kanji along with rice water.
After boiling & throwing away the cooking water, I rinse rice with cold water that will take away some more starch. Drinking starchy water will defeat the purpose. Rice water has pectin , using that water to stop diarrhea is useful.

I keep rice in cooker. reheat it when I want till next batch is to be cooked, since it involves heating rice again no need to clean the inside of the cooker unless you spilled rice or using sticky rice , cleaning inside the cooker not required just pour some water and slush it around and throw water out and add rice and water for next batch Never got sick bcoz of it as rice is boiled and kills any bacteria in the air or water
I had an Indian friend who boiled up rice in lots of water. Once the rice was done he took his hands and grabbed up the rice and squeezed it to get out the excess water. I thought that was so weird cooking rice that was, but it tasted good.
This method is good. But never cook anything in Aluminium vessel. Use brass or bronze. You can even avoid stainless steel also. Earthenware is excellent if you can handle and maintain it well.

Kanji water need not be consumed everyday. It can be consumed occasionally as it has some water soluble vitamin in it . Rinse rice several times until water is clear! Boil rice, as the foam forms remove with spoon. You can also drain through a colander, rinse, adding water and heating repeating two times until it done! Drain to colander for one final time. Set the colander over a pot to continue draining and ready to serve! Back when i was a little girl the water was used to starch clothes before ironing.

After cooking rice FREEZE it in a refrigerator after it's a bit cooler....so cool it a bit and then put it in the freezer for 24 hours. Then you can hear the rice again. It is now a resistant starch. When taken as organic rice with organic MCT or coconut oil it can be healthy in moderation.

I wouldn’t drink the water. Rice contains numerous contaminants including arsenic. Boiling rice is a very effective way to remove the maximum amount of contaminants from the rice, but it ends up in the water….
If you brown the rice it will change the starch sugar profile...on dry heat in a skillet low to medium it really works all that rinsing is for the birds it doesn't change the chemistry for real but of course, you don't hear me

I am not sure why this is an ingenious method. This is how rice is always cooked if one does not use a rice cooker. Drinking kanji is the worst thing one can do because all it is cabs dissolved in water. If one is to drink kanji then why bother doing the cooking the way you have done? In our house my granny used to use the kanji water with curd to wash hair..sour card especially as in those days she there was no fridge.

Cook in pc to get the benefits of rice water and reduce consumption by 15 percent by reducing quantity of rice itself.
In my country we usually add double the water and after cooking for a while, let all water to be absorbed. No draining needed.

Sorry but I didn’t know there was any other way to cook rice.
Most of the nutrition and flavor is lost in this process. Rice becomes bland in taste. I prefer the absorption method.
