I’m learning cello and this is way more inspiring than classical music. This is how I want to play someday.

Brian Ivy if you don’t learn basic classical , you will not not how harmony and chord progression is made, you will not not how to using appagio to creat open voice melody, you will not the cadence of phrase. You will not understand jazz scale. You can try to fly without learning how to work.
Good news, if you really wanna skip all the basic classical, you can try play pop style like Linsey Stirling, it might the easiest style to do.
