Travel Buddy Oven Cook Ups Ep 14 - Rack of Lamb & Vegies

Travel buddy cook up number 14, Rack of Lamb & Vegies, after a couple of wins with the breakfast wrap and Chicken Parmi rolls, we thought it was time to put the Travel Buddy to the test again and cook a rack of lamb. Easier said than done, after looking in every shop for the last few days we finally found a rack in Millicent SA and it was the last one in captivity there also. We had just finished an ice bath in the freezing waters of the Pines cave sinkhole, so it was the perfect time to get the roast in the oven. Some basic vegetables gently coated in some rosemary and other herbs and our first try at frozen corn in the oven too. With dinner started we checked out a few more sinkholes around and in Mt Gambier and then headed out to a pine forest to set up camp for the night. Having set up camp, it was time to get the roast out, and we were not disappointed, moist and delicious lamb with some juicy corn and roasted vegies, you can't ask for much better than that.
Always try to get your oven nice and hot before putting anything in and remember to thaw out you food before cooking or it will add more time to the cook (and moisture).
*Remember its not perfect, compared to the way you cook at home in your own oven, but it's all happening while your driving and saving you time when you arrive at your destination or for your lunch stop on the road. Keep trying different foods and times and see what works for you and your family.
Pre heat oven for 30mins, Prep time 10 -15 mins total, cooking time approx 2.5 - 3 Hrs.
Ingredients -
Rack of Lamb (size depending on number of people)
Potatoes
Sweet Potatoes
Pumpkin
Rosemary and mixed herbs

Peas
Beans
Brussel Sprouts
