    I will be using a rice cooker that has a steamer plate for vegetable. Nothing cooked on the stove, nothing oiled.

    Great comprehensive info, thank you! What about the lectins in the mung beans, though dehulled it still is a legume, which traditionally goes along with soaking and descumming processing, what about that? And is there a spice mix more attractive for some European palates, such as mediterrenean palates? And also may the mung beans be replaces with other legumes? Love

      Mung beans or as we Indians call Moong dal has been eaten in Asia and Africa for centuries!! Don't fall into this gluten, lectin etc etc crap. Yes, these may be harmful to some because of (1) the quality of the produce and (2) your body not being used to consuming them. They are natural and perfectly meant to consume. Just make sure you at least start off with some organic stuff and build your way up to larger quantities slowly.

    I recently moved on a business venture to Ghana and it's hard for me to find certain things, like moong dal. I'm sure that's the one thing I can't substitute. So unfortunate.

      White rice, on its own, has a relatively high glycemic index, so it's not usually recommended for people with diabetes. When you mix the rice with mung dal, the glycemic index will be lower. To further lower the glycemic index, you can change the rice to dal ratio and have more dal and less rice. You can also replace rice with quinoa.

      @@ThuLe-eh1xe No. Yogurt is meant to be made with animal milk. Oat milk is not milk and you'll just end up getting fermented oat milk but not yogurt.

    I have a different Instant Pot and it does not have a 'porridge setting'
