    The videos from America's Test Kitchen are always made with very detailed and concise instructions. And they really try to test out different methods and often offers you very unique tips. I also like the friendly and humorous conversations.

    I didn't know smashed cucumbers was a Chinese classic, but I'm going to try making it. The three cup chicken looks easy and tasty too .

    嗯~!你的三杯雞是很不錯的菜,不過在台灣或是中國都不太會這樣做!
    1.這道菜的薑,請不要去外皮,要保留下來,外皮的香氣很棒。
    2.芝麻油高溫烹煮會變苦,依照中醫說法會變「燥熱」,所以保持中小火是正確的,但是這到菜色最重要的,是把薑味用油炸到芝麻油中,所以會先用油炸薑片,等香氣出來後才會放入蒜片(其實用整顆蒜頭更好)。
    3.三杯雞是沒有醬汁的,因為醬汁都被吸收到雞肉裡,不過可能這樣做法你們不見的會習慣。
    不論如何,這道菜看起來都很美味。

    Hahahaha that vinegar bottle (at 18:56) says 尖酸刻薄, meaning "Harshly sarcastic". I don't know how it gets translated as so, but this is way too acidic for vinegar :)

    You can also just add some dried pepper flakes (of your choice, intensity wise) to the dressing for the cucumbers if you prefer.

    Can you someday show a recipe for Yuba Noodles. I had never heard of tofu skin being used before. The recipe I viewed was a salad. Can the yuba noodles be used for hot dishes?

      Is there another young lady? I haven't seen her yet. What I've seen is people complaining that they allegedly "replaced" Lisa with Adam, which is not the case but the complainers don't seem to know enough about the show to realize they're completely wrong. They always say bring back the old reviews when in realitu Adam actually did the old reviews. Lisa is newer and doesn't do the same thing. I don't know if you're one of those complainers or not.

    Well you could just use skin on boned thighs. I've gotten REALLy good at taking bones out of chicken thighs with a pair of shears. They then get saved for soup making.

    Needed a quick Asian dressing, check. But it would be nice if some ''alternatives'' were provided in your recipes... ie the black vinegar costs over $20 and you may never use it again, can you use apple cider v. or rice wine v. with equal success? Or does that just spoil the recipe?

    Use THAI BASIL in a Thai dish not Italian Genovese basil which goes well with tomato sauce. Thai basil makes the difference in a Thai dish. Find it at Asian markets. I use a lot of it so I buy the seeds and grow it myself in the ground.

    For keto...what would you use instead of the brown sugar and cornstarch in the chicken dish?

      KJ4RMZ almond flour to thicken. Skip the sugar or cut in half it isn't much over the whole dish.

      Just skip them both; neither of them are critical to the dish. You will just have a more watery sauce.

    Another idea is using chicken wings separated to individual joints. It gives a better flavor than the skinless meat they use, and the pieces are about the right size.

    I don't have black vinegar. The ones I currently have are regular white vinegar, apple cigar vinegar and balsamic vinegar. I wonder what the closest substitute would be?

      The seeds in English cucumbers are pretty underdeveloped, much like "seedless" watermelons. I'm no doctor, but it may be possible that you can tolerate them.

    I was eating smashed cucumber with peanuts but the nuts were much softer than raw. Do you know how they softened?

      Boil them first..ssme with almonds..if you boil them they get bigger and soft..start with raw nuts not Planters or roasted.

      @@@jake9705 In water. You can fry or blanch food in oil, but not boil it, because oil does not boil. Blanching food in oil is done a lower temperatures, closer to the temperature of boiling water, rather than the high temperature of frying oil.

      I prefer chilled. It really just depends on which purpose of serving. As the side dish it’s better served at room temperature, as salad for some summertime party you can definitely go with the chilled

      Vinegar means "mean" in some contexts. Someone who is "full is vinegar" is "full of meanness". So someone took the wrong translation from the dictionary! 🤣

    I noticed a June 20, 2017 pull date on a package of tofu, yet the publish date on this ATK video is March 7, 2019.
    What gives?

      China is a very large country, and the food that is common in Chinese restaurants outside of China does not necessarily reflect the vastness and variety of the cuisine.

      I've been impressed over time with how they've handled cultural classics. They're up front about it not necessarily being authentic, but explain why they make certain changes and choices.

    I'd like to see ATK get up to speed with the actual nutrition facts of: vegetable oils, soy products and processed foods are BAD and should be shunned and NOT featured when their better replacements could be used... LIQUID AMINOS, OLIVE OIL, coconut OIL spray, pork rind panko crumbs... Etc... C'mon guys!! Get on board with low carb and a healthier influence...

      @@vanscoyoc I think panda express is, but most local Chinese carry outs are decent. And I wouldn't call the 3 cup chicken "crap". It is a lot healthier than your favorite orange chicken general tsao chicken sesame chicken, and to me it tastes more sophisticated than the entry level american version junk Chinese food. I don't see why it is wrong for this channel to introduce the real Chinese recipes to the american audience, if you aren't interested you are simply not their target audience. Go somewhere else to find your panda express recipes and leave the people who are interested alone.

      Smashed Cucumbers is quite common in China, though the taste is just meh, at best ok. Actually, I think the side dish I've eaten the most is Smashed Cucumbers. It's not because I love it, it's just very common.
