- This ridiculously delicious chocolate eclair recipe made from airy choux pastry filled with vanilla pastry cream and dipped in chocolate are nearly foolproof to make and will be gone in a flash, éclair actually translates to “flash of lightning”! The airy choux pastry is SUPER EASY to work with and VERY versatile.
Ingredients:
Dough:
500ml water
200gr butter
300gr flour
4 eggs (knead when the dough is cold)
Bake for 30 minutes at 180C(400F)
custard for eclairs:
2 eggs
150gr sugar
1tsp vanilla sugar
50gr flour
500ml milk
