      I just saw my first video yesterday and I've now watched half a dozen more. She's GOOD! I said immediately, "How does she only have 37k subs? She's way better than that! She has to be a blogger or has a platform somewhere." Her personality comes through immediately and is super relatable, but she teaches a ton as well. I have never subscribed after just one video.

    My mom used to make butter in the blender when we got cream and milk from our cows, and later, from my relatives. It was awesome

    I use distilled water and sea salt in my butter bell. The salt helps keep mold from growing on the butter. I’m trying the lemon balm butter!

      Nikki- WHAT an excellent idea that I had heard of! While I haven't had a problem with mold an extra measure I can take is worth it, I so appreciate you for passing that along. And yes to the lemon balm butter!

    I have never heard of a Butter Bell. Not even my grandmother used one. I don't think it's a thing here in Australia but I'm going to hunt for one. I hate hard butter and love this idea. Thank you!

    I live in Canada and we keep our butter in the counter all year round. Never goes bad and it can take us several weeks to go through it

      I grew up in a European household. Neither my mom or grandma ever refrigerated butter . Im a senior and have always left butter out in my own home. Never ever had a problem.

    I have a butter bell I got from a thrift store a while back and I think I was using it wrong as it would mold but I didnt realize you had to change the water out every week or so. This cream to butter recipe is life changing! I will be doing this for Thanksgiving to try it out on the fam, thanks for everything you do!

      Hello sweet friend! I'm so happy to hear you'll give your butter bell a second go. Yes, switch out the water every 5 to 7 days with cool water and you'll be set. Butter is an excellent fat and being able to store and use it multiple ways truly comes in handy!

      I made that mistake too! I gave up on the butter bell because I knew I would not reliably remember to switch out the water. i just keep a jar of ghee on the counter. I don't know if it will last 40 days but I just use a small jar so I can use it up before it gets bad then bring another small jar out ghee out of the fridge.

    Sally Fallon fan here and yet I never thought about making my own butter! No more spending my children’s inheritance on Kerry Gold! I learned so much from this video! I love butter and slather it on my toast in the morning, put it in my tea and when I go out to eat I sometimes ask for butter to add to my entree or soup.

      About a year ago I came across Sally Fallon (how I managed to have gone this long without 'finding' her is incredible) but once I did, I consumed nearly everything I could find (books, videos, podcasts). I've made a lot of changes and still have a way to go on my journey but the way she lends such credibility around the diets of elder generations and pulls the rug from the last 50 years or so of food marketing is incredible. I hear you on the Kerry Gold, lol. Between being able to make delicious fresh butter and stockpile store bought when its on sale to make ghee I love being able to always have and use a quality fat!     Hi, Cassandra! I LOVE, LOVE, LOVE your channel. First, because it's just plain amazing. Second, because although the YT homesteading community is AWESOME, there isn't a lot of diversity. In past videos, you have said you only use "approved" recipes, but I can't find an approved source for canning butter. Can you point me in the right direction? Finally got a pressure canner and dying to give this a try. 🙏🏾❤️

    I had to laugh for two reasons when I listened to the beginning of this video. First, I often watch UA-cam videos at faster than Normal speeds, and I thought I had you on 2x Normal speed - but I didn't! 2. It's good to know that I am not the only person made frantic by hard butter. It makes me crazy when I go to a restaurant and the rolls on the table are (unnaturally) soft, but the butter is hard as a rock. I look like I am saying grace for a looooong time as I hold the wrapped serving of butter between my two hands that are clasped together.

    I've watched and enjoyed several of your posts and instantly subscribed when I discovered you. OMG! You talk fast.
    I have always cooked from scratch, and am familiar with a lot of the techniques and items you reference. Yet I still find myself rewinding multiple times to make sure I didn't miss something.
    Please, continue teaching and innovating recipes, but take a breath once in a while, repeat certain sequences for viewers trying to take notes, and/or change your editing to either establish a "prep" and roadmap to follow you thru a recipe or to recap all the things that went into the final product.

    Butter bells are great but I change my water every day or two because temperatures are much higher in the south. Even in the winter??? First of December upper 70's but this week in the 50's may have our first freeze on Sat Dec 17 in North Texas. Thank you for all the great compound butter combinations. Buy on sale and freeze. Yes Grandma's knew best.
